Ginger is really easy to take over a mead in the flavor side of things making it hard to balance. it is a great thing in the less-is-more additions most of the time. Elderberry NEEDS to be paired with something brighter or you have to use acid to balance it out. Peach is also one of the weakest flavors and benefits from White and yellow in equal amounts and add an extra pound to boost the flavor.

I have two meads that are at least two years old. Very medicinal tasting. Maybe some acid and Allulose might help, but doubtful. They are clean, but medicinal.

I made an elderberry wine before, and my impression was similar. The favor was dark, with strong notes of earth and raisin. Not my favorite. I then made a pomegranate elderberry wind and I thought the combo was great.
That sounds really nice - perhaps the brightness of the Pomegranate balanced the earthiness of the Elderberry?
I’ll say aging works wonders not just mead but all brews especially if you want developing an delicious flavour.
As long you didn’t let them aged for next 50 years lol

I have an elderberry wine that has given me similar issues with a strong bitter note that seems to be 'unfixable'

Certain styles of mead are meant to age before drinking, think of polish meads for example.
Same goes for certain wines, some have to age up to 10 years to reach their peak.
With this I don't mean that you shouldn't prefer to make meads that are ready sooner, but only that meads and wines meant to age are a thing. A big thing actually.
So, kinda like, it's not that you made a bad mead only because it needed to age, if that makes sense.
Actually, it's an achievement in and of itself, because it's not necessarily easy to make those.
Let alone the fact that some wines are still not good after aging! 😂
I'm sure there are some that need more aging! I believe the Polish meads because they're such a high gravity and abv. I guess it's good to know what ingredients and ways of making your mead/wine will require a longer or shorter aging period to get that peak experience.
