3 wires? Are you sure? I'm thinking it must be an RTD which is another type of temperature sensing element. Typically those elements will have 3-4 wires and will only have two different wire colors, example: 2 red and 2 white or 2 red and 1 white. An ohm reading between the two different colored wires would let you know for sure, thermocouples will have a very low resistance, whereas an RTD will probably read over 100ohms.
