Spent a few weeks in Thailand building permaculture gardens for the school children so they would have food while they study since they live at the school! Also did a little bit of elephant patrolling to make sure the elephants didn’t get into the farms! Got to wash them and feed them, such beautiful creatures, such a beautiful country, nicest people on this planet.

He's so sweet! That fermented chive looks good. Yummy! I'm going to give a try making it. I love freshly rolling a bunch of them up with rice paper and eat them with sauce, or making soup with them.
But I cringe when he squeezes the chives. He's bruising up them up and dumping that green water is like throwing away the good juice of the chives. I guess making his recipe requires bruising up the chives so that the fermentation can start working super fast, especially when you want to have it eaten within a couple of days or so......

I circumvent many of the soil problems you experience by growing in wicking containers.
Containers hold 4 to 7 days' worth of water. Soil is moist, but never wet.
No need to worry about season.
Soil is removed to be enriched with compost and worm castings between crops. When harvested, soil is changed and new crop planted.
    Very easy.

Mr. Jandai you can get a cow in there to eat & poop, then spread corn and mulch. Get pigs to root the bad grasses as they find the corn. Then biochar & compost & let the chickens spread the compost & enrich soil with their poop. You sell pigs, chickens & a cow, after they improve your soil. Even better if you can get a neighbors herd. All you do is animal herd manage, whilst your soil is enriched & you sequestering carbon into soil.
