Just did a trial batch using your suggested recipe. After 2 previous fails with other recipients, your did tienes out a lot more creamier than previous attempts. I’ve left in the frig for a while to settle and will try later on a sandwich. A taste test left me without that traditional taste of mayonnaise but I think it’s just a matter of time before I get to the finish line. Thank you!

Homemade mayo is good for a week or two in the fridge. I just tossed some homemade stuff that had been back there for months and it looked exactly the same though I dared not smell it so you'll probably just want to write a date

It's not. I literally just did what he did and it didn't work. There's steps he's leaving out. One of them is everything needs to be room temp, which it was, and it still didn't work. There's something he's leaving out.

I was taught to do this by super slowly adding oil to a whisking mixer and it would break about half the time. I doubled this recipe using regular vegetable oil and it emulsified like MAGIC and made me feel like an idiot for doing it the old way, though it tastes slightly off. Probably because veg oil is super bland. Make sure to put your immersion blender in the bottom of the container and don't start pulling it up until you can see the mayo forming and even then really slowly. I also seem to recall adding Dijon mustard using the old way, which added a touch more salt and vinegar as well as mustard which is an additional emulsifier, probably will try this recipe with a different oil and dijon 👍
Using vegetable oil defeats the purpose of making it from scratch as vegetable oil is highly inflammatory. Try avocado oil. It’ll impart a better flavor.
I don't know but I added extra virgin olive oil and it had soo much overpowering taste in the mayo I was not able to eat it :p I don't know if I am doing anything worng.

If you use a more neutral oil,it will taste more traditional. The very best,for me,is Avacado oil..Olive has a strong flavor.

USE NEUTRAL OIL (CANOLA, SUNFLOWER) NOT OLIVE OIL. MOST OLIVE OIL TURNS BITTER IN FOOD PROCESSORS AS IT OXIDIZES RAPIDLY.
