What’s the difference if I can’t use the sodium hydroxide and the boiling water technique? Will they taste the same?
No they will not. The crust gets a special texture and the flavor profile changes when you use the sodium hydroxide. If you use the boiling water technique it also changes the texture and flavor a bit. If you don’t use any of the techniques they will taste and look like regular buns and not like pretzels
