Great questions. You would need to lock the elements in the template before assigning it in Canvas. All student work is automatically saved and students can leave Canvas and return to complete the activity at another time. Once it is submitted the students can edit it outside of Canvas, but their submission will stayed locked in place in Canvas, unless you have allowed for multiple submission attempts for the Canvas assignment.
