  • Minute Recipe: Melba Toast.
    For Jacques, nothing beats an earthy soup to keep you warm during the coldest season and his Hearty Vegetable Bean Soup hits the spot. To spice up the evening, he creates a pocket in boneless chicken breasts to fill with a tasty stuffing in Chicken Supremes with Tapenade and Mushroom Sauce served over Vegetable Couscous. The meal ends on a sweet note with a Pear Compote and freshly baked Almond Crumble Cookies.

      Yep. and you won’t find shows like this on TV anymore. Not in America anyway. Everything is perfectly lit, everyone has caked on makeup male and female, and expensive clothing, with a super modern kitchen in the background with millions of dollars worth of high end appliances.. You’d think a simple cooking show would be made to be relatable to the average home owner, but nope, not anymore. All the cooking shows utilize millions in appliances and high end pots and pans. What average person owns all that stuff?

      @cjb cjb Man I can tell you it's not about hard times he/French people went through. It really is because it's simple and delicious.
      Ask French people who've been abroad for a long time which french food they miss the most, and this answer will often come out.
      It warms our hearts in a way I can't even describe.

      Reminds me of another great cooking quote. Julia Child throws a stick of butter in a pan and says "I'm not sure what we're going to be cooking today, but it's going to start with that stick of butter right there."

      Yes, he is right. Sometimes the simple things will do. It's a blessing to be able to appreciate the simple things.
      A little olive oil with garlic, salt and whatever herbs there are around diced-in can be a great little detail for a dip and more luxurious lol.

    I love Pépin's great ease and sincerity in sharing great recipes... He is even showing us that there are many very affordable dishes too, as there are so many of us struggling to afford to put food on the table. He is the best teacher too! So kind and generous.

      Nowadays on cooking shows the cooks already have everything cut up and just add it to the pan. It's nice to see the knife action. It adds to the experience of the video. Like you're there with him cooking in his kitchen and having a glass of wine of coarse.

    Merci, Maestro!!! Jacques Pépin remains the lone heir to the greatest chefs, TV or otherwise. His crazy skills match only his generosity in sharing them. I, for one, count myself along the many cooking enthusiasts who have applied his down-to-earth approach to classic French techniques, without being talked down to. Merci encore.

    Jacques Pepin and Julia child are the epitomy of what world class chefs are made of and they take the time to show you that with the proper cooking utensils and even what you have in your refrigerator what a classic home style meal you can create for your family and friends and enjoy the holidays like they should be. I feel sorry for this generation they've no clue what life is really all about.

    *Ingredient Amounts for Almond Cookies*
    1 cup flour
    1 cup toasted almonds
    1 tablespoon sugar
    1 tablespoon vanilla extract
    1/2 cup butter
    2 tablespoons water...or maybe 1/4 cup. Start with 2 tbsp...you can always add more if it's dry!

    I first watched Julia Child as a very young child, then Jaques! I LOVE him to this day. I actually LEARN something every time I watch this true chef. The so called cooking shows now are soooo lame. Mr. Pepin is truly the OG~! May his reign continue!

    I appreciate that he explains why certain things are done in a particular way. When I watched the food network it seemed a lot of shows only demonstrated what to do and it became repetitive and boring.

    With both Jacques and Julia there always seems to be a kind of sweetness in the way they communicate. They understand (particularly in Julia's case, where she started the trend for French cooking on tv) that fine cooking can sound scary, and they made it so simple, so easy, that people weren't scared to try the recipe. They never come across as intimidating.

    What is so easy to admire about Jacques Pepin is he eminates a gentle soul and a lack of snobbery. I could watch him wash floors and explain why he does it that way. Also, he probably is a reasonably wealthy man, I don't know for sure, but he wastes nothing. He uses so many things sitting or left over in his refrigerator. This shows his genuine humble nature.

    Ha ha... just like my mother !! He has already touched everything after handling the raw chicken, also wiped on the same towel, then he says he has to wash his hands !! My mother never did it and we never, ever got anything from it !! I think the yuppies of this age have taken it too far...

    I was just watching another show in this series about how to cook eggs, including a proper French omelet and had to try it for lunch. Guess what, it was so well explained in the video that I actually succeeded. I love his calmness and confidence, obviously stemming from years of experience. His recipes are very old fashioned and culinary tastes have moved on since. However, I love learning the proper techniques which help me understand how it all got started.

      So true. And he also use to say: "Start by cooking simple things to build your confidence". Very good advice! I think many people stop cooking because they want to do too much at the same time and then it crashes and they never go back.
