One of the librarians here in Houston told me she uses grated zukes + Old Bay seasoning to make faux / vegetarian crab cakes. Her recipe pretty much follows this template.

Just made and ate them. Delicious, and none left over! Had some different herbs on hand, added garlic chives and rocket instead of parsley. Worked out fine.
You’re right in being careful not to over salt with the addition of cheese, however, Zucchini is a bland vegetable and I guess we have to taste it after we try this recipe for the first time in order to see if too much salt was used……..good point 👍🏻
@@lesleyvivien2876 I thought about the addition of the cheese, and limited myself to use 2 teaspoons of salt on the Zuc's, and left it for a little longer to draw out liquid. The recipe wasn't over salted. I also didn't need to add salt when plated up. To me the balance was just right. I'm a light user of salt and take the view that you can always add salt to the finished recipe, as it is too risky and a waste of food if over salted.

Same here. As I watched I thought of replacements for the egg (flax egg or silken tofu) and Greek yogurt (vegan yogurt, non-coconut based). I can find vegan parm cheese replacement, too. Now I'm hungry for this...

I like the recipes on your channel, but would like to see less of "lose weight" and more of "healthy recipes". A lot of us just want to eat healthy which naturally leads to healthy weight. Recipes are really good but this "lose weight" emphasis is a turn off.

The courgettes are salted, presumably to help get rid of liquid, and later more salt is added, on top of the Parmesan cheese. How salty were they?

I've substituted apple sause for oil and chia seeds for eggs. Works great and you cant tell the difference.
