Homemade Kerala Bakery Egg Puffs മുട്ട പഫ്സ് with Chef Binoj | English subtitles

Back in the late 20th century when Keralites migrated to the urban spaces of India and set up a lot of bakeries, they took the cities by storm with their secret weapon, the egg puffs.
The eggs puffs are an emotional element to most of us Malayalee's and brings crispy and soft memories about our school days. Perhaps was lunch on some days too.
Ingredients:
Puff pastry:
250 gm - Plain flour (maida)
250 gm - Unsalted butter
125 ml - Water
1/2 - Lemon juice
1 pinch - Salt
Egg masala:
6 nos - Eggs (12 portion)
2 Tablespoons - Oil
5 Cloves - Garlic
Small piece of ginger
2 nos - Green chilli
1 spring - Curry leaves
1 Medium - Tomato
4 Medium - Onion
Salt - to taste
1/4 Teaspoon - Turmeric powder
1/4 Teaspoon - Black pepper powder
1/4 Teaspoon - Garam masala
1/2 Tablespoon - Coriander powder
1/2 Tablespoon - Kashmiri chilli powder
1/2 Cup - water
1 Egg for egg wash

1. What was the oven heat setting? Both upper and lower elements on at same power or any setting?
2. Baked for 20 min at 180 degrees?
3. Can pastry dough be stored for next usage or does it always have to be prepared fresh?
4. Pastry dough consistency should be like roti or denser?

Pre heat the oven for 10 minutes at 180 degree.
Both upper and lower heat should be same .
Pastry dough can keep it in the freezer.
Consistency should be roti .
i tried your recipe but it came out bad.the pastry broke and the butter came off when making the dough.i took 1/3 of 250g butter initially.i weighed it as 84g.are you using lesser amount.why did the butter come out when i made the dough
I am sorry hear that , I used the ratio from what I have explained in the video. Please make sure that the butter should be fridge temperature.

Chef do you know What's the difference between puff pastry and flaky pastry
Puff pastry which requires numerous rolling and folding steps to create the many layers. But in Flaky pastry contains less fat and fewer layers.

Many thanks for the recipe.Would it be short crust or puff pastry sheet that you would recommend please?And would that be 220 deg for 20 minutes as well?
Please use puff pastry and Pre heat the oven for 180 degree 20 minutes and cook the puffs as well 20 minutes.

What is the total quantity of butter used?
Total 250 grams of butter.
So basically motta puffs are indian croissants .
Not really. Puff pastry is a laminated product which relies solely on lamination for any rise during baking. Layers of fat which is introduced in puff pastry has hot water content in it. When baked in a hot oven, the moisture content converts to steam which gives the puff pastry the trypical lift.
Croissant gets it leavening from yeast and steam acts as rasing agent( the same process with puff pastry). Fermentation of yeast produces carbon dioxide, water and little bit of ethanol. Carbon dioxide gives volume, yeast fermentation produces flavour with the help of ezymes and lactic acid produced. The moisture produces in fermentation stages also helps in giving volume during baking stages
Usually puff pastry the original way which is 6 single turns. Croissants are usually done with 3 single turns or 1 single .

Buttery pastry can be used for pies, tarts, desserts and canapés. You can use margarine as well.
