Try adding 3 more ingredients to give it power. Half a teaspoon black pepper or some medium chillis, tablespoon brown sugar and lime juice to taste to balance the flavour. Add to plain unsalted rice.
The first time I made chicken and bok choi my wife would not eat any saying that it didn't have enough color in it.🤦🏽♂️ The next time I made it I added sliced carrots and mushrooms and she dug right in.🤷🏼♂️
This is what people imagine is Chinese food. It isn't. The pan is nowhere near hot enough. You don't even stir the chicken; just poke it. And you left 75% o fth eflavor in the pan when you served it. Terrible way to mistreat food.

it appears salty, it's not necessary to have baking powder for what and why? corn starch is good enough to blend with the sauce.
In many Asian recipes I see backing soda added to make chicken more juicy and tender. I guess that she used baking powder as a substitute.
deglaze with cooking wine or little chicken broth before adding in the bokchoy so you don't waste that precious yummy roux at the bottom of the pan.
