Depends on the cut of meat. Tenderloin/fillet I want it blue-rare but with a really nice sear, picanha: medium rare, rib eye: medium (too much interconnecting tissue just doesn’t breakdown properly below medium), sirloin/ny strip: med rare (fat needs to be rendered properly), flat iron: rare (very lean), flank: rare if tenderised properly.
I eat and cook a lot of meat, different cuts work better at different temperatures. The cut in this video did not look like a super tender piece, the way it was cooked through was probably a touch under medium and that’s pretty good to be honest.
This is a cut that would benefit from reverse searing until around medium to med-well. Temperature probe it, 54 Celsius, put in an oven at 65-70 celsius for an hour or two then finish over charcoal.

that owner seemed so chill, and yeah the video did definitely seem more polished and set up for sure. idk if i just haven’t watched enough, but it seemed like this video of beards was pre-emptively prepared

He has been using a couple camera guys and an editor for some videos recently
I believe he mostly calls ahead for these bigger challenges, I think he drove about 4 hours for this challenge, so you wouldn’t want to rock up unannounced only to find they didn’t have the meat available. Most places he goes to are spur of the moment and you can see the looks on the faces of staff; this owner definitely knew what he was in for and played up for the video, which is smart to be honest, a ton of new challengers (and failures) will inevitably be spurred on to give it a shot.
A lot of business owners don’t like professional eaters doing their challenges. (Free food). So small contact between a heavy eater and the business is accounted for as a sense of respect.

i used to eat well done steaks most of my life just because thats how it was always cooked growing up, but in the past 5 years i switched to medium after trying it. maybe in a couple more years ill give medium rare a try.
I order Medium because I find many places under-cook the steak, so I end up with a perfect Med Rare

For me some cuts of steak can be a little better if they are a medium or medium well but if I'm going for something like a filet or ribeye, it's medium rare or medium for me.

@CastledMallard depends on the cut for me anyways if it's a fatty steak I prefer medium so the fat renders more leaner cuts medium rare to rare
Medium Rare Steak, Medium for Burgers. For steak, bacteria doesn’t penetrate the meat so it’s safe to eat it rare. But for ground beef, bacteria is able to penetrate all the way through pause so the meat should be cooked all the way through

Depending on the restaurant you are at sometimes "medium rare" that they cook will acyltually be medium or medium well so you might have to say rare so you'll get medium rare. Medium if you order in the middle the cooking of the meat will either fall into Medium rare or Medium well if it's not cooked to Medium which are both perfectly fine for a steak. I used to order Medium Well but too often you'd just get well done steak. So I dropped to Medium and now no matter how the steak comes out its usually good.

Your logic is awful lol. If medium rare is “half raw” because there is pink then carry that logic all the way through to be consistent and say “well done” is still not done because it’s not black. My point is the pink isn’t because it’s not cooked enough and the juice is not blood.

I'm a chef for a French restaurant in Kansas City Missouri. I cut my own beef and cook it in house. It's all depends on the cut of the steak. A filet mignon rare , a Kansas City strip medium. A ribeye I love medium rare.
honestly, depends on the cut of meat that i order. scotch fillet - Medium Rare, Rump - Medium, Eye fillet - medium rare, burgers i always prefer medium well so that all the fat renders and you get all the good juices

I used to be a fan of rare but after watching food science videos if you got a medium or a medium you start incorporate more smells from the steak Into the experience, smell plays a big part into the over all flavor of a meal.
depending on the cut of steak, i like rare to medium rare. like a filet, i need almost blue. but i always tell people i like my steak to still moo a little and try to jump to eat my salad

There’s a place in Harrogate, England that does a 96 OZ steak challenge that has a 72 oz steak(I think) and a shit load of sides. The temptation while I was there was insane

Depends on the cut. Medium Rare for fillet or a regular sized rib eye/ sirloin.
Medium for bigger thicker bits or stuff like skirt/ flank. Similarly owt done on a smoker I'll take medium but proper medium where it's pink but cooked all the way through, not a cm of grey around the edge.
Adam gets the steak well-done because with a SLAB of meat like that, most places don't cook it all the way through even when they try, as you see here. So The more you ask for them to cook it, the more likely the center is, somewhat, cooked @timthetatman

If at a restaurant, ask rare for a steak and they usually get it medium rare or rare still sometimes. For burgers, same principle, however if it is a burger joint or like they are known for it, best to ask for medium rare plain and simple.
