First, olive oil is just wrong, and second, in Mexico we cover our corn in mayonnaise, not butter. Some vendors do both, but mayo more popular. Americans think cotija cheese is everywhere in Mexico, and the reality is that it is very specific to one region of Mexico, for elote, I would use a queso ranchero, which tends to be a little more accessible. And I’ve never seen cilantro on elote, cilantro goes on tacos.
