you might want to check out puck screens as well, I just got one and it made a hell of a difference. The rest of my prep is basically identical to yours.
I've been using the Saint Anthony BT Wedge to level the top of the grounds prior to using a calibrated leveling tamper. Research showed that the wedge design had no ill effect on extraction, whereas something like the OCD tool did have a negative effect on it. Not using it for distributing...using WDT for that. Only to maintain distribution while having a level surface prior to tamping.
At 6 bars, are you getting a thinner texture (that’s still velvety)? Or does the espresso maintain a the typical thickness? I am curious to try it, just to see about getting less acidity!
Definitely give it a try! I mostly notice the acidity is a lot softer. I've put some more developed coffees through it like Counter Culture Hologram and still get quite a bit of texture.
Have you played around with using a paper filter in the bottom of the portafilter? Ive noticed a pretty big improvement even just using an aeropress filter that I've trimmed to size.

I honestly really like the wedge. Was really skeptical about using it without tamping but have had great results with it.

I've used paper filters with coffee shots/spro overs and didn't like them, but haven't tried it with espresso
