There was also a really long quest to be able to smelt dark iron ore as well. You needed to talk to the ghost dwarf in BRD after beating the Council of the Nine after bringing him some annoying items.
Rarest ore I’d say would be Arcanite Crystal. While it doesn’t have ore in the name, it essentially acts as one - and is mined from high end ores (mostly Thorium). Most fun ore is black iron ore, it just had so much going on. I’ve played all expansions, but mining was really impactful in the early xpacs. Lessening off until the alchemy raid flask buff killed it got me entirely.
No, arcane crystal is not an ore, it is a gemstone. There are a whole lot of other gemstones which have a small chance of being mined from deposits and veins, so in this sense you could list them all. Arcane crystal is no different.
Another note of Elethium Ore: For a decent chunk of the beginning of the xpac, mining it would raise your threat with the Jailor in the Maw to the point you could no longer mine it due to dying instantly, plus all of the modifiers that would make it extremely difficult to travel normally. On top of this, due to it increasing your threat, you also couldn't farm the rares/perform quests, since that ALSO increased your threat in the Maw, forcing you to essentially CHOOSE between farming/increasing your rep/performing quests.
The existence of both Silver and Truesilver implies that the first Silver ore we mine is actually fake Or they just ran out of IRL names for rare metals which aren't horrendously poisonous. Except there still are iridium, platinum and palladium which are only referenced in items in game, but not as actual ores or metals
PS: certain platinum complexes are actually pretty poisonous, they're used in cancer treatments because tumor cells die from such poisons faster than healthy cells. Many chemotherapies are basically just poisoning you enough to kill the cancer but barely not kill the actual person.

Korium is way more rare then Khas plus its a manufactured rare they made all the gathering worse, truth is maxing all the skill of a gather gives you Legion rank 3 skill
So from personal experience, I think the Gold Ore has closer to 8% chance to spawn in Classic Thousand Needles, specifically the pillared part of the map. Mainly because a much smaller amount of the Iron Ore spawns overlap with Mithril in the zone. So if you don't have active copetition for the ores, you'll usually find 1-2 each lap around the zone.
Never had a problem with Dark Iron in Classic, there was a node or two really close to the start of BRD which could be reliably farmed solo(ish), likewise with Khorium there could be a node really close to the start of one of the instances (the Bird folk one if ircc), adnittedly it was more of a dice roll but served up decent amounts of the other ores for very little effort, Trillum could be a pain but if you didnt need the Ghost Iron the Transmute was a handy short cut, totally agree on the Shadowlands lone mind,,,,
You should do top 10 hardest 'glory' achievements. Stuff like the firelands kneeling achievement, the ji'kun achievement, the thok achievement the soccrethar achievement come to mind to have people commiserate over.
I used to farm elethium ore at the launch of shadowlands on my holy paladin. Could heal myself a ton with instants and survive the aura that was supposed to kick you out from the beastlands, so I had no competition. Made 2 million gold in 1 day doing that

ooh i can share a small data when it comes to khaz'gorite ore. i made a spreadsheet to keep track of my sales. i have perception of 29%, mining is max in all knowledge points. for 23 days of mining (I gather for at least 4-6 hours a day around Azure Span and had a standard route for myself) I've gathered a total of: 257 Khaz'gorite ore (rank 2) 103 Khaz'gorite ore (rank 3) take it for what you will!
You forget to tell them ya need 8 dark iron ore per bar, also to learn to smelt it you need to bring 20 silver bars with a few other materials to learn it , also you learn it somewhere deep in brd
mining in dragonflight can be sooo annoying since the nodes can spawn very often in unreachable locations, or just some that are so annoying that you don't bother
I've put in support tickets for a couple nodes that spawn in unreachable locations. One got fixed for sure since it was an area I commonly flew by, not sure on others.
What are you talking about , the only ore in MH is gem ore . Literally no other ores. Khorium spawns at a slow rate in ANY open world Outland zone and instances 66+ excluding raids . Cause no ores in any raids but gems in mh

That was Incendicite, which was only used as a quest item. The same is true for Rethban Ore in Redridge Mountains. Both of those were removed in Cataclysm along with their associated quests. Thanks, Dickwing... There is also Lead Ore, which is a grey item drop from Gnomeregan.

The quest 'The Spectral Chalice' is still a thing if you want to learn how to smelt Dark Iron Ore, there is no circumventing the trip to BRD.

At least they're not herbs, which can be Windswept; and while you get Rousing Air from it you also get blown off the cliff you picked it at

In regard to Khorium - the best place to "farm" it was actually in the Raid Attack on Mount Hijal.
