If you are using the Search & Discovery app from Shopify, all the category metafields in your store would be listed under 'Select Source' in 'Add filter' section.
Thanks for the video! I have a question though. Let's say a Shopify Category is 'Rings' in Jewelry. It has 7 category metafields, and I can't find a way to add new ones within the same 'Rings' category (that is, more than 7 pre-determined ones). Is it even possible? Do you have any suggestions for workarounds?
Currently Shopify does not provide a method to add new Category metafields. If you can find the metafield you want to add in another category, temporarily assign the product to that category and fill out the required metafield, after that change back the category to Rings in Jewelry. Please note, this method is just a workaround and may not work in the future.

Additionally, we can't connect custom metafields to automatically populate sizes that we've already added. Is there a solution to achieve this? Please let me know if you have any suggestions.
As of now a metafield definition created within a store cannot be used as a category metafield. This is why we are not able to use such a custom definition and its values to populate options/variation values in a product. Regarding adding custom value to the metafield, yes its time consuming as shopify currently do not provide a method to create metaobjects in bulk.
Hi, just wanted to share an update: Shopify now offers the ability to create custom category metafields. If you already have data in a normal product metafield, by assigning a category to it you can convert that metafield to a category metafield.
Cooll! Just, switching existing products from color name swatches to color swatches, is challenging. I mean, we don't want new variants to be created when doing this.
Yes, you are right if not careful duplicate options and additional variations may get created. Also assigning product options to Category Metafield for a large number of products is challenging and time consuming, but can be largely simplified with a CSV upload to shopify.

As per the current documentation made available by shopify, category metafields and its default values are determined and fixed by shopify.
