Loved watching you eat with your hand. Pumpkin ka cheela nahi, pumpkin ke phool ko batter mein dip karke fry kiya jata hai. Badi chura is made from sun dried urad dal badi. Which is fried and crushed along with garlic, onion strips, salt, and green chilli.
The way you describe the taste of our authentic odia cuisine was on point and i must say that being an odia it's our emotions not every food vloggers describe the taste & pronounced the name of dishes correctly but you did it perfectly ❤
Pakhala is very similar to our Panta vaat(from Bangladesh) We soak cooked rice in water and eat it in the morning to cool us down with a variety of vhorta and curry. Panta vaat was a Poor's man food but every Bangladeshi can relate that it's our culture and pride

Usi paste me pumpkin flower ko duba k tawe pe fry hota he. Aur ye chawal k paste ce banta he toh bahat crispy hota he, garam garam khao toh
Maam the saag tasted bitter because its not palak ki sag. its actually moringa saag, the drumstick leaves are mainly we eat with pakhala because of its taste or else we make any other saag with garlic and onion tadka. Lots of love from Odisha.❤

Pakhola is known in Bengal as " Panta Bhat" .Panta Bhat is made in a simple process in overnight. During night the rice is cooked.When rice is very hot after straining the extra water from the rice then simple water is poured in the rice of pot and left it over the night covering the pot and in the morning at 8/9 /11/ am the Panta Bhat is eaten as breakfast or lunch with potato fried or brinjal fried and with fried fish and with green chilly onion and lemon with slight musterd oil to taste. This Panta Bhat or Pakhola is made during hot summet season to keep our body cool.Actually Panta Bhat were made in the poor family for breakfas or lunch.The farmers family basically made Pakhola to eat in the morning to go out for farming work and the farmers also taken Panta Bhat with them for lunch in the field in the noon with just green chilly salt and onions. 2.7.24.

Hey the chura is made of badi and not rice. :) Badi urad dal ko bhigoke, pees ke banayi jati hai alag alag types ki and sabse plain wali ka hum chura banake khate hain. Also, the pakahla is fermented overnight, the maand is kept, curd is added and to it chonk of your choice. Besides the pumpkin flower is dipped in besan and fried on tava for a flattened pakoda sort of a thing which we can tava bhaja. Would love to share recipes with you sometime, if you like to cook :)
Patra poda mangsa (mutton spiced in masala wrapped in leaves and roasted), bamboo mutton n biryani all these are unique. Also should try satapuri, also should try odia Peetha there are dozen of varieties made in households mainly. Also 56 blog of puri entirely veg devoid of many spices yet yummy.
In Odisha we use mustard oil, Mustard seed masala in most of the curry & in odisha this masala is called as "बेसर बाटन". And it's our unique odia ways of using mustards in food. You will Never find in India where they use so much mustards in their food except Odisha
I know you apologised but everywhere you’re mentioning things wrong thats you saying rice ka chura that’s not. It’s badi made of rice and urad and then the paste given the shape of circle and dried in sun for atleast 1month, it’s usually made during winters. Then we used that as side dish, it’s shallow fried and that you’re eating us called badi chura, first shallow fried, semi smashed with onions, garlic and chillies. You could have asked the staff to help you out how to eat and know the names if you didn’t know. That pakhala you eating we add salt to it for flavours and not masala is added to it I don’t know where you read that. 5:54

Odia food is not at all heavy. Very less spices and oil
