Your right kay. I make Kentucky Butter Cake. Look it up if you haven't heard of it. You will have the ingredients in your pantry. If you don't have the buttermilk, add a tablespoon of vinegar to a cup of regular milk. This cake will feed 20 people and its delicious.
Yes, cake mixes are smaller. But you can still use those recipes from the past when cake mixes were 18.5 oz. Just add 5 tablespoons of self-rising flour to the 15.5 oz. box mix. I got this tip a few years ago and it has worked well. One time I only had plain flour so I added 1/2 teaspoon to it. That worked well too. Give it a try.
I’ve made a Neiman Marcus “brownie” variation for years and use a German chocolate cake mix and add chopped pecans. Then the frosting is the same cream cheese topping you made for this, but I add a teaspoon of vanilla. Delicious and always a crowd pleaser.

My aunt put coconut and pecans in hers. This is the best tasting cake ever! I've also made the strawberry and lemon flavors.

I make these all the time, but we always called them Chess Squares. I have used white, lemon, strawberry, butter, and yellow cake mixes, and brownie mix. I love the white cake mix, but I think my personal favorite is the lemon. I add some lemon extract to the cream cheese mixture for a little more flavor. Sometimes I add a little vanilla to the cream cheese mixture. These are always a big hit at family gatherings.

I have made this cake twice. The first time was good but not great. It was dry. The second time I added one extra egg to both the crust and the cream cheese batter, and baked it for just 37 minutes Now, it is delicious!! I don't know if it because I live at 5000 feet, but it just needed more. Even the grandsons love it..
Dark Chocolate cake mix would be my choice.....if you think if would work ok! Lemon would be great, and I'd add some fruit on top when serving! Strawberries, raspberries, blueberry pie filling etc.!

Oh boy, my imagination is going wild. I have a sort of Black Forest kind of thing in mind, but it would take an extra ingredient. Chocolate cake mix on the bottom, then either layer a can of cherry pie filling on top of that and before the cheesecake layer, or else mix it into the cheesecake layer. Then maybe some chocolate chunks on top for decoration. Or, to go in a different direction, a spice cake mix for fall. I’m going to have fun with this.
I am going to experiment & come up with my own version of this. Instead of boxed cake mix for the crust, I am going to substitute sugar cookie dough for the crust. Wish me luck!

This is sort of similar to Paula Deen's Gooey Butter cakes. I have "doctored" that recipe up by using a chocolate cake mix, then add a small jar of Nutella in with the cream cheese mixture. It was fantastic! A few nuts wouldn't hurt, either. BTW, I am very impressed with your ability to hold a small bowl in front of the camera with one hand and crack eggs single handedly into it with the other. I can barely crack eggs without making a mess using both hands.

I definitely think a strawberry crust would be delicious. I think I’d add some freeze dried strawberry powder to the cream cheese mixture. If I did a chocolate crust I’d add some powdered peanut butter powder and reduce the icing sugar just a bit.

It could be the altitude we are in SE Texas so we are well below that.
