Finally was able to acquire one of these. Gorgeous. Shipped quick and everything was well wrapped and protected. Very solid construction, high level of attention to detail. I am very happy I finally was able to pick this tea set up!
Finally having my first true GongFu experience today and sharing with my children. Starting out with a cheap basic brewing set, and hoping to someday upgrade to the Guru!
I bought this tea after watching this video. My best friend is visiting on Sunday, and she's anxious to learn all about gong fu brewing. I also bought the Moonlight White and can't stop diving into the pack to smell it! Thanks, Don; another really educational and helpful video. Keep them coming, please!

Hi, after watching this video, I realised that the way I have been brewing my PuErh tea has been a mix of the GongFu method and the western method, ie 6-10g loose leaf for 3 mins. No wonder I didn't enjoy my PuErh tea!!!
Just placed my order. Paying a lot for it as I'm living in Germany. So excited though! Going to test it with a young gushu Puerh from the Mei leaf store!

I have read that whilst Thiene, dissolves within about the first minute of infusion, more time is needed for polyphenolic compounds that give tea its colour & some parts of the flavour, to be released. I have also read that polyphenols break down Thiene's, thus longer the infusion the effect of Thiene is reduced and thus, reduces the stimulating effect of Tea. Therefore, a brewing time of 1-3mins is proposed in these articles. I would like to hear your views on this and specifically how these aspects work with Gong Fu brewing
Hello there, great videos and very nice set there! though I'm getting a bit confused; in this video you used 11 grams of tea for 150 ml, but by looking at you tea brewing chart 1.5 grams would be fitting (which seems much more normal for me) - could you maybe help me with what im missing? Thanks!
thehighestunit Hello! In this video Don was brewing gong fu style or Chinese tea ceremony style. This is defined as a hefty amount of leaf with a short quick infusion time. This allows you to fully enjoy the tea over many infusions.
Looks like a great set! I have a lot of this stuff bought separately, but I don't have a nice tray like that. Might add the Gongfu Guru to my Christmas list. :-)
Hi, i've got an question. Not per se on this topic, but similar! I read on your homepage that it is possible to do more then one Infusion when iam brewing tea. That is an good thing, but sometimes i don't want or have enough time to drink more then one cup of tea. Is it possible to let the tea leaves dry and brew a few hours later again? Or would that ruin the tea or leaves? Sorry for my poor english. :-)

Does the same stand true? Is the second western infusion stronger or the first one? I would love for another video of some western brewing and your thoughts as well as comparison since you do a lot of gong fu brewing.
Nice video, I love it and also you brewing chart! The only thing is your phone on the table, it takes your attention, you touch and check it 16 times. I saw you checked or controlled your camera using it, but for me it was killing the vibes. The environment and the background are so clean and simple in a good way. For me that phone is just not for being in the middle of this intimate, traditional tea brewing. :) I love your contents and thank you for the information you share through these videos!
Thanks Mate, I am working on stopping the instinct to check focus. I have had issues in the past where I recorded an entire video and then found it was not in focus. Because I am usually alone there is noone to check so I am a bit paranoid about it but I will try!

1.5 grams is appropriate for "western style" brewing, but with gongfu style you use a lot of leaves and do multiple super short steepings
The first rinse, we also call it “waking” the tea up!

+Briante Najev you can but with ball rolled Oolongs and cake tea it will not open up the leaves sufficiently.

It refers to a 100ml vessel that you will be adding leaves to and then filling up with water (so actual amount of water is around 80-90ml).

Tea can have natural Lactones which give it a milky taste and texture. These tend to be higher with certain cultivars like the Taiwanese Jin Xuan tea.

With Western brewing the first infusion is always the most flavourful. We will try to make other videos comparing brewing techniques.
should i use purple clay pot for dancong teas? not sure they're lightly roasted or highly roasted teas
You can use the Yixing for Dancong tea (although theoretically the red Chaozhou clay is more often used for Dancong).

Wash the Guru with soapy water and dry after every session. Soak or wash with tea stain removers occasionally.

Why are you using so hot water for oolong? Are you crazy?
Oolongs are brewed in boiling hot water in general but especially for ball rolled oolongs.
Kinda late to the game here, but want a great set. All self-contained and meant for travel. If I just had an extra couple hundred $ laying around.

Yuck. I have some earl grey tea and I tried this method. It sucked. The "first brew" just tasted like hot water with yellow color.
I hope you know by now this method of brewing is only meant for chinese teas specifically oolong teas😅earl grey should be brewed western style only..

oloong is half fermented not roasted
Most oolong is roasted and I think that you mean half oxidised rather than fermented (unlike raw and ripe PuErh which does undergo fermentation).
Thanks for the useful brewing instructions. I suggest not have a cell phone there, it distracts the viewer and reduces the quality of the video.
