I have only just figured out what the mandoline is. It is referenced here and there in recipes. Over the last few years, I discovered that I have a meat allergy so my family's diet has become significantly more vegetable-based. I spend about an hour or two a day cutting up vegetables for juicing, cooking, stewing, etc. We have four people in our house and then I also prepare food over my father's house as well. That's a lot of food prep. It really sounds like I need one of these. I may or may not buy this specific slicer. It looks like what I want but I would really like something whose blade I can replace easily and it seems, as far as I can tell so far, that diamond cutting mandolins do really well. I'll update this comment if I do end up getting this slicer, though.
Less bulky than a food processor so if you have to do a lot of slicing (scalloped potatoes) it can be useful. I was always disappointed at what I thought was the limitation of food size, i.e. it had to fit into the circle. However I saw a video where they used the hand guard on an angle, without the round holder, and it worked very well for long thin slices of things like cucumbers. Like you say, it takes some practice and a glove is highly highly recommended. (as spoken by someone who almost lopped off a finger!)
After doing some research, I decided on the Progressive International PL8. I use it almost every day. It's very easy to use on tomatoes, green peppers, potatoes and other fruits and vegetables. It's a solidly built piece of equimment and I really like that it comes with a lifetime warranty so no need to worry about the failure of any of the adjustment knobs.
Have just bought one, have found the cutter blade turner a bit stiff but love chopping onions quickly.. I have tried the waffle cut successfully Fter seeing a video that suggested turning the product being cut a quarter turn each time - it works.

I had contacted Progressive International last week via email questioning whether or not replacement blades were available and they indicated that they were available for the newer models of the PL8-1000 and the PL8-1050 with the caveat that one should check to see if the blades are rivited. Apparently some later models have (I'm guessing) machine screws allowing the blades to be replaced. The rivited models of course cannot be replaced.
Something similar was done with food processor blades. Mass recalls of riveted blades. They are supposedly sending me a free one. By any chance do you know if those recalls were related to government regulations?
I just found out today my mandoline was broken. The julienne function barely worked on it, and it never had a waffle function. This one looks much safer, though I was looking at the exact glove in your descriptionfor my last one, because the metal spikes on the hand guard hit the blade and i couldn't use it quickly with the guard. I like the looks of this model, and it's only $10 more than my last one. And much easier to clean. Your video sold me on this model!
I have this mandoline and I sharpen the flat blade with small diamond sharpening steels. I sharpen the waffle blade with a small brass wire wheel on slow speed in a drill. I use a wood clamp to securely hold the blade straight up when sharpening.
Instead of looking at it as a ton of that leaves a little piece of vegetables put those in a plastic bag and save them for when you’re making stock. Thanks for sharing I have this but it’s a different version I haven’t used it yet so you were very helpful
I have the PL8. Overall happy with its performance. It took me some time to consistently keep the slider assembly in the track. I can attest to the sharpness of the blades! Fortunately I didn’t lose my finger but came close🤙.

That blade is NO joke. I just got one of these today to make a zucchini lasagna. Immediately sliced my finger!

For the waffle fries you have to rotate the potato 90 degrees after every cut and it works great give it a try.

Blades noticeably duller after a few years with no way to replace them...doesn't sound worth the money to me.
