Boba likely still would have become a bounty hunter, taking after his father. He just may have had more of a moral compass early on thanks to his father being there to instill some values in him (not to say Boba lacked values, as there is at least one deleted scene of him facing Cad Bane in order to save others).
Supposing that Jango wasn’t locked up for life, he could have been released and resumed his bounty hunter career while guiding Boba. They’d become a famous father-son duo, and Jango likely would have worked to obtain some Beskar for Boba unless he decided to outright pass his armour on once Boba grew up enough to effectively use it.
Jango may even have undergone a change similar to Boba after TROTJ, without need for a Sarlaac dip. Deciding that there can be more to life than just endless bounties, he could seek to return to his Mandalorian roots and challenge Pre Viszla for leadership of DeathWatch before reforming it into something more akin to the super commandoes in Legends.
But that’s just my theory.
