    Ube Milk Buns
    Bread flour (12.7% protein content) - 430 gr
    Coconut cream/milk (savoy brand) - 135 ml
    Milk - 100 ml
    Ube - (weigh after steamed) - 100 gr
    Sugar - 70 - 90 gr
    Butter - (melted, unsalted) - 30 gr
    Egg - 1 large, room temp
    Salt - 5 gr
    Yeast - 10 gr
    Ube Fillings
    Ube - (weigh after steamed) - 200 gr
    Heavy cream - 220 ml
    White chocolate - 50 -60 gr
    Salt - 2.5 gr
    Butter - 15 gr
    Baked at 320 F x 22-25 minutes, middle rack

    Please see the description box for the full recipe, helpful tips, and details. Some have asked about how to achieve the color like mine. It really depends on how dark the purple sweet potatoes you bought. The ones I used in the video has a very dark rich purple. If yours are lighter, add some Ube extract to enhance the color. The butterfly brand is good. 🙂

    I had some success making these buns, and some challenges :) I measured my dough by weight but it was drier than yours, it was barely sticky at all. I think Canada's all purpose flour (12% protein) is just super thirsty so I'll use less flour next time! Also FIY for other viewers, this takes a long time to knead by hand, about 30 minutes for me. I didn't make the filling so I made 9 buns instead of 12; however, I think I should have made 12 anyway because mine took about 42 minutes to bake to reach ~200*F internally... but they taste so amazing! I've never had a coconut flavored bread before, and I definitely need more of it in my life :D Thank you!

    I made this last night Aimee and it was a hit! I copied everything as shown in the video and description box and the outcome was perfect. I was gonna share the photo of my ube milk buns but I couldn't copy paste it on this comment box. In order to achieve a bright purple color, I put some drops of ube extract. Thank you Aimee for being so detailed in your presentation. I appreciate the dough mixing speed tips and the emphasis you gave on the final dough appearance. I love your channel btw.     Just made the buns using 75% ingredients for 20cmx20cm (8 inch) square pan but reduced 50% yeast (just 5 grams which I find already enough). I made 9 buns, each weighed 78 grams. They turned out exactly like the video. They the softest buns that I’ve ever baked so far! I skipped the filling as we like to eat them plain or with kaya jam. Great recipe!

      Devon Montecillo I actually just eyeball it! I kind of put 1/3 of a bar and mixed with the smashed purple yam with sugar. Tasted it as I go along until I feel the right sweetness. Don’t put too much tho, the cream cheese will melt when baking and will make the buns more dense. And yes, I substitute the white chocolate with sugar.

    Hello again Aimee, happy to let you know that i made the buns yesterday and it turned out great - light, fluffy and tasty. Thx. The only thing that I was not able to achieve was the color of the buns. Pls confirm only use 100gr of Ube for the buns and 200 gr for the filling? Or 150 gr of Ube for each? Thanks again. Keep up the good work, can’t wait to see what is next 😉.

      Thank you! The measurements are correct as listed in the recipe. The color really depends on the purple potatoes you purchased. Their colors do vary, lighter or darker. You can see in the video how dark mine was. If your dough is light, you can add some Ube extract to enhance the color. Butterfly brand is a good one 😉

      Enhances the taste. Also helps to thicken it well after cooled. Yet, melts while baked so the filling is super creamy.

      As for your question....Maybe a little more sugar to the dough. It’s not as sweet on it’s own compared to purple potatoes. Also, for the filling, you can taste test it and adjust to the sweetness you want. 🙂

    Omg Aimee I sent my husband to buy yams for me because when I was younger my grandma would steam these and we would eat well after I steamed it LOL my husband and I ended up eating them haha ! Looks like I’ll have go back to the store to get more so I can make it! If anyone has a pressure cooker you can also make it in there! Just add one cup of water and pressure on HI and steam for 10-15 minutes!

      You can use some condense milk if you have, otherwise, just plain sugar 🙂

      I just meant some will be used for the filling and some for the buns. You can decrease the bake time.

    Hi Aimee. I’m currently making your wonderful ube bread recipe. My purple yam is beautiful in color but the dough doesn’t have the same purple hue as yours when adding the yam to it. Do you know why? Thank you.

      Add some Ube extract if you want the intense color. The only reason I can think of is the difference in color between one variety to the next. It happens to me sometimes too. Some batches I do have to add the extract.

      Go slow when adding in the liquid to the flour and adjust as needed.

      Please let me know if I am understanding the question correctly. You want to use this filling for the Pandan recipe? But replace it with Pandan extract? If that’s correct, then keep in my this filling has fresh purple yam so not sure how the color would be. It would probably overpower the taste of the pandan.

      Yes, I was wondering if I could take your ube filling recipe and substitute the ube with pandan extract and keep everything the same (white chocolate, etc.) to create a pandan filling for the pandan bread.

      It won’t work. White chocolate, heavy cream, butter, and Pandan extract = very runny. It won’t solidify. The purple yam helps everything congealed. Sorry.

      Local Asian grocery stores. There are different varieties of purple yams, Ube, Okinawa, Stokes, Charleston, but usually it will say Japanese yams or sweet purple yams.

    Hi Aimee, I notice the bottoms of my breads aren’t cooking very well do you think it’s due to the filling? I don’t feel like I add too much filling (I actually end up using half of the filling recipe per batch), but I’m thinking maybe it’s the filling or maybe it’s the way I’m wrapping the bun?

      Probably the way you shaped and closed the bun. If the dough is too thin on the bottom, the filling will soak through or make it more soggy.

      Sure, yellow yams have more moisture so add more flour if needed. 🙂

    Hi! Can I do the same purple jam mixture using the ube halaya? I mean, mix the ube halaya jam and the coconut milk? Thank you! I've tried the pandan pandesal and it was so good!! Thank you so much!

      Yes, you can but might have to increase the flour some if it’s a little wet. The yam is much thicker.

    Hi! I was wondering if I can help all purpose flour instead of bread flour? Also, if I do put some Ube extract in my dough, how much is a good amount? I don’t want to overdo it and ruin the dough.

      All purpose is fine. Not as good as bread flour. About 2-3 drops is good. Add more if you want to intensify the color 😉

      It’s fine, but be careful with the amount of durian. It tends to be more watery than Ube 🙂

      what happened when my dough is not wet and mine looks dry follow the time from the video too.

      You may have to adjust the water. It might need a little more. Depending on your flour source it might be drier than mine. Also, make sure the yeast you are using is still active. And depending on what type of yeast, it might need to be activated prior to adding into the flour mixture. Hope this helps.
