yummy i havent made this in years it lasts ages when you make it the longer it stands the better the taste gets. if your mango that is very young and sour you can add some sugar to your boiling water as well. adding boiling water opens back the pores so that it will absorbed all the ingredients being added. if you skip that step it will take a very long time before its edible. it also softens the skin a bit. great job as usual have a great weekend everyone.
You put the salt before drying, after drying then you throw boiling water the reason for this is to remove any bacteria from the mango which could get into the mango while drying & also to soften a bit
I did mine in the oven, it was delish and stayed well in the fridge for over eleven years! Some that I left kinda thick wasn’t fully dry but, that Achar was tasty 😋
You should add salt before you keep the mangoes in the sun ,and water will spoil your achar ,I make it regularly so I am suggesting you ,don't take it personally , sister ,if you want ,I can share you the recipe

I followed your recipe a bit. I was unable to dry my mangoes so I just blanched it as you did . also,rather than using mustard oil I opted to use regular oil and I added some Chadon beni. worked just fine. Oh and I heated my oil

the mango. has to be salted before you put it out in the sun. the salt helps draw the moisture out and dries it out faster

what u supposed to do first is soaked the mango in salt water then put it in the sun to dry, thats how they did it long ago

With mosterd oil, u can keep your Achar for a longer time.

Regular oil may sour the entire batch meaning it may not last as long as if u used Mustard oil..
My mango anchar is dry it then pour massala geera salt then hot mustard oil with pepper then pour pepper garli and mustard oil mix all together.shanti
Great , my mom used to put the oil and spices in the Karahi and cook it for 5 mins
