Unlike competitive multiplayer, you can not set default weapons in your loadout. But co-op lets you use as many mods as you have purchased to make up for it. Also, the mods will be carried across all weapons, meaning that if you drop a modded AK-47 for an M9, any mods you have bought for the M9 will be activated. Then when you pick up another AK-47, it will have the same mods you had on the first AK you dropped. :)
I tried this level with my sister(it was both of our first time playing co op) and the enemies kept choking us it was kinda annoying but we eventually beat the level

Not in co-op adventure, you can do that in other co-op modes though, but you can only use hero skins.
