You two are a hoot! My husband, bless him, was the cook in the family. He loved scanning the grocery shelves for new ideas, always coming up with delicious meals. He was home all day (disabled) and amazed me how different meals tasted with different spices and herbs. When he was working, as well as me, our meals were always the same week after week because we were tired and just ate to get full. I sure do miss those days, watching him, anxious for me to taste his latest creation. Thanks for giving me some new ideas and watching you guys in the kitchen. Merry Christmas and Happy New Years.

I always go out the day after Christmas and I buy as many Standing Rib Roast that I find marked down for quick sale because the Butcher cut too many for Christmas. In years past I could get it for $2.99 a lb but last year and this they were marked down to $3.99 A lb. This year I got 6 roasts that were between 4 and 5 lbs. I freeze these and use them all year for Special Occasion Dinners. Birthdays, Anniversaries, I always save 2 for Xmas because we have more family that I cook for. I have done this for 8 or 9 years now. I go to 2 stores in my town. One year I only found 3 roasts marked down, but 1 year I found 9 marked down. I save $10 of my weekly grocery money to purchase meat like this. The day after Memorial Day, 4th of July and Labor day I purchase enough ribeye, ny strip and t-bone steaks for my family to have a steak dinner 2 to 3 times per month for the entire year. This year I did not pay more than $3.79 a lb. I just make sure that I have freezer room and money put back so that I do not bust my grocery budget. Meat is so expensive and this allows us to afford special meals at a good price.

Good morning papa & mama, I feel funny saying that, because I'm probably close to your age! 😂 It's Thursday Dec. 29th 2022 here on this cool North Carolina morning. I'm gearing up for the New Year, hope you guys are looking forward to a great New Year. I wanted to tell you, each New Year I host a huge breakfast for friends and family. I do more southern cooking since that's more of who I am, but I loved the idea of the French toast. I printed off the pdf and thinking seriously about trying it out. Last year I made pull a part cinnamon bread, made simply with just canned biscuits, cinnamon and spices, sugars etc. It was a big hit. I watch Sarah, Solo & family all the time and that's of course how I discovered you and mama. You guys are all just a delight to watch and learn from. I do an Overnight Crockpot French Toast Casserole that I use French bread that I cube. I prep mine while cleaning up from dinner and refrigerate. I place mine in my crockpot and cook it on low for 5.5 to 6 hours. So it cooks while we sleep. In the morning my crockpot is programmed to switch to warm. When we have guests this way everyone can eat when they are ready. I often have family and friends over for brunch after church. As we are leaving I turn it on high. When we arrive home from church Brunch is ready. I have an egg casserole that I make at the same time. I can feed 12 to 14 people with both casseroles for about $25 which is a great way to entertain. My French Toast Casserole has many variations. OVERNIGHT CROCKPOT FRENCH TOAST CASSEROLE 1 loaf of cubed French or Italian bread 8 eggs 1/2 cup sugar 3 cups of dairy. I like 2 cups whole milk and 1 cup of heavy cream but you can use any combo if dairy. It even works with almond milk. 2 tsp vanilla Mix the custard together and pour over the bread. Refrigerate at least 2 hours before starting your crockpot. Cook on low 5.5 to 6 hours or on high 2 to 3 hours This is the standard recipe. For variations you add these additional ingredients BERRY add 1 pint or 10 oz frozen blueberries, blackberries, raspberries or mixed berries to standard recipe APPLE CINNAMON add 2 to 3 peeled and chopped apples and 1 tsp cinnamon PEACH add 2 to 3 peeled and diced fresh peaches or a 10 oz bag of frozen and substitute almond extract for the vanilla PUMPKIN add 1 cup of pumpkin puree and 1 tsp pumpkin pie spice to the custard CRANBERRY PEAR add 2 peeled and diced fresh pears and 1 cup dried or fresh cranberries. You can also add leftover cranberry sauce CHOCOLATE CHIP add 1.5 cups of chocolate chips CHOCOLATE PEANUT BUTTER add 1/2 peanut butter to the custard that you have microwaved for 30 seconds to make it pourable and 1 cup of chocolate chips CHERRY add 1 10 oz bag of frozen pitted cherries and 1 tsp of almond extract instead of the vanilla These are all the variations we have tried. Our favorites are the mixed berry, peach and cherry. EGG CASSEROLE 2 LB frozen hash browns 12 eggs 1 lb of cooked and crumbled sausage, bacon, diced ham, or sliced polish sausage 1.5 cups milk Salt and pepper to taste 3 cups shredded cheese of choice OPTIONAL diced onions, bell peppers, mushrooms, jalapeno or tomatoes Place the hash browns, cheese and breakfast meat in the crockpot. Mix milk, eggs, salt and pepper and pour over the other ingredients. Cook on low 5 to 6 hours or on high for 2.5 to 3. I often cook both casseroles for brunch. I prep the casseroles the night before and place the crocks in my refrigerator. In the morning I set the crock on the counter when we get up. As we are leaving for church we turn them on high for 2.5 hours. My crockpots switch to warm when done. When we return from Church brunch is done. I add juices and coffee and we are ready to serve. I can easily serve 12 to 14 guests for brunch for less than $25 since I am only using 1 lb of breakfast meat. Leftovers reheat well in the microwave so I often make 1 or the other to have for quick breakfast meals.

I am not very creative so it is difficult for me to come up with my own recipes. Watching you have has helped me tremendously especially with cauliflower, which I love, but can get a little boring. I do an Overnight Crockpot French Toast Casserole that I use French bread that I cube. I prep mine while cleaning up from dinner and refrigerate. I place mine in my crockpot and cook it on low for 5.5 to 6 hours. So it cooks while we sleep. In the morning my crockpot is programmed to switch to warm. When we have guests this way everyone can eat when they are ready. I often have family and friends over for brunch after church. As we are leaving I turn it on high. When we arrive home from church Brunch is ready. I have an egg casserole that I make at the same time. I can feed 12 to 14 people with both casseroles for about $25 which is a great way to entertain. My French Toast Casserole has many variations.
OVERNIGHT CROCKPOT FRENCH TOAST CASSEROLE
1 loaf of cubed French or Italian bread
8 eggs
1/2 cup sugar
3 cups of dairy. I like 2 cups whole milk and 1 cup of heavy cream but you can use any combo if dairy. It even works with almond milk.
2 tsp vanilla
Mix the custard together and pour over the bread. Refrigerate at least 2 hours before starting your crockpot. Cook on low 5.5 to 6 hours or on high 2 to 3 hours
This is the standard recipe. For variations you add these additional ingredients
BERRY add 1 pint or 10 oz frozen blueberries, blackberries, raspberries or mixed berries to standard recipe
APPLE CINNAMON add 2 to 3 peeled and chopped apples and 1 tsp cinnamon
PEACH add 2 to 3 peeled and diced fresh peaches or a 10 oz bag of frozen and substitute almond extract for the vanilla
PUMPKIN add 1 cup of pumpkin puree and 1 tsp pumpkin pie spice to the custard
CRANBERRY PEAR add 2 peeled and diced fresh pears and 1 cup dried or fresh cranberries. You can also add leftover cranberry sauce
CHOCOLATE CHIP add 1.5 cups of chocolate chips
CHOCOLATE PEANUT BUTTER add 1/2 peanut butter to the custard that you have microwaved for 30 seconds to make it pourable and 1 cup of chocolate chips
CHERRY add 1 10 oz bag of frozen pitted cherries and 1 tsp of almond extract instead of the vanilla
These are all the variations we have tried. Our favorites are the mixed berry, peach and cherry.
EGG CASSEROLE
2 LB frozen hash browns
12 eggs
1 lb of cooked and crumbled sausage, bacon, diced ham, or sliced polish sausage
1.5 cups milk
Salt and pepper to taste
3 cups shredded cheese of choice
OPTIONAL diced onions, bell peppers, mushrooms, jalapeno or tomatoes
Place the hash browns, cheese and breakfast meat in the crockpot. Mix milk, eggs, salt and pepper and pour over the other ingredients. Cook on low 5 to 6 hours or on high for 2.5 to 3.
I often cook both casseroles for brunch. I prep the casseroles the night before and place the crocks in my refrigerator. In the morning I set the crock on the counter when we get up. As we are leaving for church we turn them on high for 2.5 hours. My crockpots switch to warm when done. When we return from Church brunch is done. I add juices and coffee and we are ready to serve. I can easily serve 12 to 14 guests for brunch for less than $25 since I am only using 1 lb of breakfast meat. Leftovers reheat well in the microwave so I often make 1 or the other to have for quick breakfast meals.
