i know nothing is always perfect, but having a partner like lorn has to be amazing and so uplifting. i found your guy's videos not that long ago, and I'm loving it so far.
1). I agree with your spicy take. While some people can take the heat along with great flavor, many just seem to want to taste nothing but heat with varying textures. 2). I think your struggles with the non-recipe content is pretty straight forward, cooking recipes gives videos an inherent and logical structure. Without it, you need to create your own, which is easier said than done.
Awesome show and great Q&A! It was really nice to hear you go into your workflow and in particular how much work it actual is. Getting all those camera angles while also cooking and keeping track of everything is super labor intensive. I can't even imagine how many times you have to wash your hands in order to move the cameras etc... Keep up the killer content and looking forward to fallowing more of your recipes! Jay

What I like about this vid is not just the information, but we get a sense of who Brian is (and his wife!). And he seems like a great dude just as his videos suggest.
Brian, very cool Q&A. The music of the chef resonated - I worked for several years doing kitchen prep in the morning and bartending at night at an Italian restaurant, and the head cook had a set playlist every damn morning - Def Leppard’s _Hysteria_ on repeat. The entire time. For years. The weekly menu / shopping list, you’re a man after my own heart. It’s so handy to know what you’re going to make each night and to only shop those items. We had a couple nights that were always ‘pizza night’ or ‘burrito night’, and then always had one night that was purposely blank where we could shift a day or change up what we were having, but yeah, more than one trip to the store in a week was _fail_. That said, when my finance suddenly passed away one morning in 2019, I fell out of the habit and have never really gone back. Cooking and shopping for one just isn’t the same. It’s cooking channels like yours that got me cooking for myself at all again. I was almost exclusively making heat-and-eat frozen stuff. Channels like yours reminded me of the joy in the process, and I was honestly shocked when I cooked again for the first time and how wonderful it was to have real food. Your hot take is spot on. Nailed it. Someone asked about tips for a household of two, I wanted to share my habit as I’ve mostly been a house hold of two, and now one. I try to time it so I have my groceries right before the weekend. On a Saturday or Sunday morning, I’ll prep for the week like you’d prep for a restaurant. I cut up all the onions, slice cabbage, marinades - whatever I can do ahead without messing with the quality of the dish. Sometimes I’ll even do things like cook the onions ahead if I know it’s going to be a crazy week and portion them for their dishes ahead, or even do a huge amount of them and freeze them for use anytime, just like making a load of homemade stock and freezing it in portions or cubes. These days I’m just prepping a mis en place for the week and make whatever I feel like at night since I don’t meal plan for one. It’s a nice little gift to yourself after a long day. And while we’re talking about prep - I’m also on the plastic deli tubs. They stack & store small, share lids like you say, they’re killer for freezing stock and other stuff you prep, they’re much cheaper than the glad/ziploc, and they’re reusable. The glad/ziploc stuff can’t touch them - they change their design all the time and the lids from old ones don’t even fit the new ones, never mind how they don’t fit across sizes. Deli containers rule. All desserts are guilt free. You could be dead tomorrow. Enjoy the dessert. (Just don’t eat an entire sheet cake or something 🙂 ) Dinged-up kitchen floors are blessing. It’s a workspace and once they’re dinged-up enough, they all match, and you won’t worry about it again. 😀 Last note: Bri, you’re cool and all, but Lauren is super cool, and you’re totally punching above your weight luring someone that awesome into your life. Go easy on her Christmas stuff. 🙂 Off to watch the original Sheet Pan Pizza video on repeat.
Brian and Lauren, I don't often comment. Your channel is amazing. These are the highest quality videos for cooking that I have seen. I've been watching since the "W&S Days" and I have to say that all of it has been entertaining and helpful. I think the first video I watched was Sheet Pan 1.0 and even that one hooked me immediately. Recently, I have my kids watch a video and recreate the recipe as a group. Having these helpful videos for my teens has been a blessing. Thank you for all of your hard work. You are the Cooking Rock Stars!
Take away: "Recycling is a myth". J/K. Absolutely LOVE the channel. You are a natural on camera (we'll just ignore those couple gardening videos). You are natural in the kitchen. And there is already a "day in the life" feel to your content. I know it's produced and rehearsed. But it comes off as natural. I feel like that's you in the raw. And lastly, you and Lorne (I hope I'm spelling that correctly)...You're adorable. As an older, jaded, divorced and washed up chef myself, you guys give me hope in 2 aspects of life that I had just about given up on...Cooking (I burnt out professionally ) and love which sometimes feels like a myth. It's truly a joy to watch you eat your food. You have an excitement that I always look for when I serve someone, yet rarely is my enthusiasm for food met in kind. And it's a joy to watch you two interact with each other. Both give the impression of "this is how it's supposed to be". And that feels good to watch. Thank you sincerely for sharing that with us.

The first time I watched one of your videos I wondered if you'd broken into an empty house and started using the kitchen. I've never seen counter tops that bare in a lived-in kitchen. No toaster, no coffee maker, no crock of tools by the stove. I envy the amount of cabinet space you must have.
I came across your content earlier this week, and so much of what I have seen has been top notch. I don't have a lot of experience baking, so as I watch videos on bread and stuff, I ask "why" so many times, and you do a phenomenal job of answering my questions like a lot of other channels, forums, and recipes don't. Absolutely agreed. The more I home-cook, the more I realize that, much as I love them all, hot sauces can totally mask the real flavor of dishes. Brian's comment on "Those are the guys who tell you your chili recipe is wrong" makes SO much sense to anyone who works hard at trying to cook from scratch and get it right. That said, sure -- I love my hot sauce. But it's a condiment, not an always "go-to." So Team Bri on this.
Couldn’t agree more and with that said I have a couple friends I’ve made my chili for and they always complain it’s not hot enough as if that’s the only reason to eat chili. Then I remind them it’s why I have hot chipotle peppers on the side for their tough guy taste buds.

Brian, don't apologize for liking a clear workspace, it's a reflection of your restaurant experience. I like my station to be clear, too. I have co-workers who're always surrounded by chaos (16 knives, 5 towels, bowls, implements, etc) and they're always the slow ones. When your station is clear, it's easier to focus on what you're doing, imho.
Loved this Q & A session. Your wife is a sweetheart. Just FYI, I've cooked on electric for years and years, still hate it. However, I now have an induction cooktop and it's almost as good as gas. I would still prefer gas, but this is totally second best. I love your channel and your content!

If it helps: what I do is create a weekly menu then make a list of all the ingredients I need to buy to make all the meals for the week. It'll take a few times for it to become second nature, but the more you do it, the easier it will get. There's no way I could go grocery shopping without that list: I never waste money on stuff I don't need/won't use; I always have everything I need for everything I make, and it significantly shortens the time I'm actually in the store. Once you've gotten the hang of it, you can group the items on the list according to their sections (meat, produce, dairy, etc.), and order those groups according to the route you take through the store. It only takes me an hour a week to make a menu and a grocery list, and it makes life so much easier.
You have a lot of great content/recipe’s. I made the baked Ziti last week for Christmas Eve and it was a hit. I was talking to my nephew and his husband in New York and they mentioned they were watching your videos as well. Great job and I appreciate the quality of the content.

I replaced allof my tupperware/rubbermaid containers with deli containers several years ago.1 cup, 1 pint, 1 quart... dishwasher safe, freezer safe, no lid hunt, they take up very little room, if you give people food in them you don't have to care about getting them back. I use them for prep, storage, freezing, lunches, and gifting.... Better than zipper bags which aren't very reusable, better than tupperware... and pretty darned cheap... and fully recyclable...

Great video. I really appreciate the amount of vetting you do in each recipe. There’s nothing worse than investing time and money into a recipe just for it to end up as a fail on the dinner table. I also really appreciate the explanations of why you use one ingredient in place of another, what and when you can sub other ingredients, etc. The fact that you have weights of ingredients is crucial. It’s also BIGLY appreciated that you take the time to write the recipe steps in the video description, that makes it so much easier to recreate. Keep it up dood, let’s get a cookbook out there and I’ll be the first customer.

One of my favourite things you ever said, and I think this was back in the weeds and sardines days, was "just use your stand mixer" while making some bread dough. People always swear it has to be by hand. Since switching I've been enjoying it more, baking more, and have had some amazing sourdough loaves come out in the process. Loads of trial and error, but they were all still tasty enough loaves. Thanks.

1. You can try to steam the nicks on your floor. Use a steam iron with a towel. Try it in an inconspicuous spot, first. 2. I use the shower caps from hotels to cover bowls. I reuse them, too.

i know nothing is always perfect, but having a partner like lorn has to be amazing and so uplifting. i found your guy's videos not that long ago, and I'm loving it so far.
1). I agree with your spicy take. While some people can take the heat along with great flavor, many just seem to want to taste nothing but heat with varying textures.
2). I think your struggles with the non-recipe content is pretty straight forward, cooking recipes gives videos an inherent and logical structure. Without it, you need to create your own, which is easier said than done.
2.) agree. That kind of “storytelling” is another level of writing and development I would like to explore more.

What I like about this vid is not just the information, but we get a sense of who Brian is (and his wife!). And he seems like a great dude just as his videos suggest.
Brian, very cool Q&A. The music of the chef resonated - I worked for several years doing kitchen prep in the morning and bartending at night at an Italian restaurant, and the head cook had a set playlist every damn morning - Def Leppard’s _Hysteria_ on repeat. The entire time. For years.
The weekly menu / shopping list, you’re a man after my own heart. It’s so handy to know what you’re going to make each night and to only shop those items.
We had a couple nights that were always ‘pizza night’ or ‘burrito night’, and then always had one night that was purposely blank where we could shift a day or change up what we were having, but yeah, more than one trip to the store in a week was _fail_.
That said, when my finance suddenly passed away one morning in 2019, I fell out of the habit and have never really gone back. Cooking and shopping for one just isn’t the same.
It’s cooking channels like yours that got me cooking for myself at all again. I was almost exclusively making heat-and-eat frozen stuff. Channels like yours reminded me of the joy in the process, and I was honestly shocked when I cooked again for the first time and how wonderful it was to have real food.
Your hot take is spot on. Nailed it.
Someone asked about tips for a household of two, I wanted to share my habit as I’ve mostly been a house hold of two, and now one. I try to time it so I have my groceries right before the weekend.
On a Saturday or Sunday morning, I’ll prep for the week like you’d prep for a restaurant. I cut up all the onions, slice cabbage, marinades - whatever I can do ahead without messing with the quality of the dish.
Sometimes I’ll even do things like cook the onions ahead if I know it’s going to be a crazy week and portion them for their dishes ahead, or even do a huge amount of them and freeze them for use anytime, just like making a load of homemade stock and freezing it in portions or cubes. These days I’m just prepping a mis en place for the week and make whatever I feel like at night since I don’t meal plan for one. It’s a nice little gift to yourself after a long day.
And while we’re talking about prep - I’m also on the plastic deli tubs. They stack & store small, share lids like you say, they’re killer for freezing stock and other stuff you prep, they’re much cheaper than the glad/ziploc, and they’re reusable. The glad/ziploc stuff can’t touch them - they change their design all the time and the lids from old ones don’t even fit the new ones, never mind how they don’t fit across sizes. Deli containers rule.
All desserts are guilt free. You could be dead tomorrow. Enjoy the dessert. (Just don’t eat an entire sheet cake or something 🙂 )
Dinged-up kitchen floors are blessing. It’s a workspace and once they’re dinged-up enough, they all match, and you won’t worry about it again. 😀
Last note: Bri, you’re cool and all, but Lauren is super cool, and you’re totally punching above your weight luring someone that awesome into your life. Go easy on her Christmas stuff. 🙂

Brian and Lauren, I don't often comment. Your channel is amazing. These are the highest quality videos for cooking that I have seen. I've been watching since the "W&S Days" and I have to say that all of it has been entertaining and helpful. I think the first video I watched was Sheet Pan 1.0 and even that one hooked me immediately. Recently, I have my kids watch a video and recreate the recipe as a group. Having these helpful videos for my teens has been a blessing. Thank you for all of your hard work. You are the Cooking Rock Stars!

And there is already a "day in the life" feel to your content. I know it's produced and rehearsed. But it comes off as natural. I feel like that's you in the raw. And lastly, you and Lorne (I hope I'm spelling that correctly)...You're adorable. As an older, jaded, divorced and washed up chef myself, you guys give me hope in 2 aspects of life that I had just about given up on...Cooking (I burnt out professionally ) and love which sometimes feels like a myth. It's truly a joy to watch you eat your food. You have an excitement that I always look for when I serve someone, yet rarely is my enthusiasm for food met in kind. The first time I watched one of your videos I wondered if you'd broken into an empty house and started using the kitchen. I've never seen counter tops that bare in a lived-in kitchen. No toaster, no coffee maker, no crock of tools by the stove. I envy the amount of cabinet space you must have.
I came across your content earlier this week, and so much of what I have seen has been top notch. I don't have a lot of experience baking, so as I watch videos on bread and stuff, I ask "why" so many times, and you do a phenomenal job of answering my questions like a lot of other channels, forums, and recipes don't. Absolutely agreed. The more I home-cook, the more I realize that, much as I love them all, hot sauces can totally mask the real flavor of dishes. Brian's comment on "Those are the guys who tell you your chili recipe is wrong" makes SO much sense to anyone who works hard at trying to cook from scratch and get it right. That said, sure -- I love my hot sauce. But it's a condiment, not an always "go-to." So Team Bri on this.
Couldn’t agree more and with that said I have a couple friends I’ve made my chili for and they always complain it’s not hot enough as if that’s the only reason to eat chili. Then I remind them it’s why I have hot chipotle peppers on the side for their tough guy taste buds.

Brian, don't apologize for liking a clear workspace, it's a reflection of your restaurant experience. I like my station to be clear, too. I have co-workers who're always surrounded by chaos (16 knives, 5 towels, bowls, implements, etc) and they're always the slow ones. When your station is clear, it's easier to focus on what you're doing, imho.
Loved this Q & A session. Your wife is a sweetheart. Just FYI, I've cooked on electric for years and years, still hate it. However, I now have an induction cooktop and it's almost as good as gas. I would still prefer gas, but this is totally second best. I love your channel and your content!
How do you figure? Gas is stone age. Induction is faster, cleaner, and doesn't waste heat into the room.

Showing us how to prep a grocery list for the week WOULD BE AMAZING!!!!!!!! I find it super difficult.
If it helps: what I do is create a weekly menu then make a list of all the ingredients I need to buy to make all the meals for the week. It'll take a few times for it to become second nature, but the more you do it, the easier it will get. There's no way I could go grocery shopping without that list: I never waste money on stuff I don't need/won't use; I always have everything I need for everything I make, and it significantly shortens the time I'm actually in the store. Once you've gotten the hang of it, you can group the items on the list according to their sections (meat, produce, dairy, etc.), and order those groups according to the route you take through the store. It only takes me an hour a week to make a menu and a grocery list, and it makes life so much easier.

I replaced allof my tupperware/rubbermaid containers with deli containers several years ago.1 cup, 1 pint, 1 quart... dishwasher safe, freezer safe, no lid hunt, they take up very little room, if you give people food in them you don't have to care about getting them back. I use them for prep, storage, freezing, lunches, and gifting.... Better than zipper bags which aren't very reusable, better than tupperware... and pretty darned cheap... and fully recyclable...

Great video. I really appreciate the amount of vetting you do in each recipe. There’s nothing worse than investing time and money into a recipe just for it to end up as a fail on the dinner table. I also really appreciate the explanations of why you use one ingredient in place of another, what and when you can sub other ingredients, etc. The fact that you have weights of ingredients is crucial. It’s also BIGLY appreciated that you take the time to write the recipe steps in the video description, that makes it so much easier to recreate. Keep it up dood, let’s get a cookbook out there and I’ll be the first customer.

One of my favourite things you ever said, and I think this was back in the weeds and sardines days, was "just use your stand mixer" while making some bread dough. People always swear it has to be by hand. Since switching I've been enjoying it more, baking more, and have had some amazing sourdough loaves come out in the process. Loads of trial and error, but they were all still tasty enough loaves.

1. You can try to steam the nicks on your floor. Use a steam iron with a towel. Try it in an inconspicuous spot, first. 2. I use the shower caps from hotels to cover bowls. I reuse them, too.

I was just gifted a baking steel so we're taking that on its maiden voyage. We've made it tons of times in cast iron and it always comes out great.
