Answer: Get a Soda Stream. 20:00 Being Cantonese myself, I say with confidence that "Red Boat" is a 'nice try' there are MUCH better fish sauces and vinegars out there that you can find in Asian groceries. Channels like Chinese Cooking Demystified, Hot Thai Kitchen, Souped Up Recipes deep dive into specific ingredients and tell you what brands are best and why. On calories, fat and oil are *healthy* for you. There is documented evidence and it is true that the sugar industry went after fat-for profit. It worked. American't have been brainwashed. Our brains need fat to function. It's not about calories. It's about what you eat, the quality of the ingredients and the frequency. Plus you'll be more satiated and full if you eat real food, fat included resulting in more nutrient density and will actually end up consuming less. Organic *does* matter. Put a cup of pesticide in front of you vs water which are you going to choose. Just because you can't see it does not mean it's not there.

    I respect Brian so much for putting so much money and time into these videos. There are millions of shitty fake recipes that look great on video but never works out even when you follow them perfectly. By watching your videos and other chef's and comparing them to each other I have gotten so much better at spotting those key elements that some videos cut out and it has upped my home cooking so much! Thank you for making these videos!

    A day-in-the-life video for you two would be great, especially since you already like the genre so much.

    Bri and Lorn, I used to be in books. What you need is a publisher to swoop in and augment your RUclips publishing schedule and make a fun, image-soaked book that incorporates the vibe of your channel. I say this because a BOOK can add to the channel and add to speaking appearances and your travel. It needn't be a chore to do a book. Put together a contract with a publisher to have a team build it WITH you. Chronicle Books are great (think Kenji is over there). You're a natural. Let it happen. Cheers, Mike

    @2:23 THIS. Especially when a huge part of the joy you find in cooking is watching people enjoy something you make. I really experienced this for the first time around a year ago. I live pretty far away from most of my family, so we only really see each other around the holidays. And in the year leading up to last Thanksgiving, I had (in my mind and taste) perfected a chili recipe and had volunteered to make a giant pot of it for my family (around 20 people). I found dried chiles locally, went through the multiple hour process, following my recipe religiously, gassing up how good it was going to be, and at the end, it was just sort of flat compared to when I made it at home. I was so crestfallen.
    And it's not like my family was let down. I'm basically the one person who finds joy in cooking, so by their measure it was GREAT but man the pain of knowing it wasn't the experience I wanted to give them sucked for, like, a few days.

    I know both of you work very, very hard and your videos clearly show your effort. Yours is one of three that I always reference -- and the other two are for baking desserts --- mostly. Ina Garten is here on the East Coast -- has been around forever and is always my go to. But as a younger generation -- you are always my reference and your Midwest sensibility is always appreciated!     You mention liking Seoul a lot and are about to go to Japan. Have you considered coming back and trying your chops at some Asian cuisine? I would love to see your take on a buldak!
    Also, for St. Louis spots, have you ever peeped Sauce on The Side? Calzones to die for. I've actually road tripped there from Nashville just to go like twice. Ha!

    Thank you for all your time and energy in your consistently awesome content! Side note I opened my dream coffee / ice cream shop at 42yrs old after 17 yrs in the restaurant industry. That being said sadly I signed the lease in a booming economy here in Washington state.....guess when....2 months before Covid hit. We were one of the last states to reopen so after fighting an up hill battle I made the decision for the our family to stop loosing money and close the shop in July of this year. This broke me. Shortly after I found your channel and quite frankly you may have saved me from a much deeper depression than I might have fallen into. Making bread and pizza from scratch has been my go to meditation thanks to your vids! My friends probably know you by name because Ive quoted your recipes so many times! If I want to make something new I ALWAYS check to see if you made a video on how to do it! So with all of that your very genuine thank you at the end of the video was so appreciated and I would like to THANK YOU from my family to you and yours!

    Brian ...I've been cooking for over 30 years and I taught cooking classes for 5. I usually don't make other people's recipes because I find they usually aren't very good. So I make my own. I have used some of yours but adjust them to be appropriate for my diabetic husband. You're good and I appreciate you, your wife, and this channel. I like our perspective and your peanut dressing was delicious. And, using cornstarch to thicken cheese sauce had really good results. I made a mac and cheese with it in my Christmas spread and my extended family of 30+ people devoured it.

    Love love love. So happy I found your channel. I have tried 4 times to make a sourdough starter. It took me a while to come across your channel, but I finally found your recipe, and it worked!!! I am mixing loafs 11 and 12 today and following your Union Loafer recipe. Every loaf has been delicious. I am trying to figure out how to use my kitchenaid to mix. The first time I tried, the dough was super sticky. I don't think I mixed it long enough. The dough didn't rise as much either. Praying I get better results today. Thank you for all your talents and wisdom.

    This is the first AMA I've seen since subscribing and I loved it way more than I thought I would. Super fun! You're content is great and though I enjoy a lot of the other food creator channels a lot as well, I've actually made more from your channel because it hits the sweet spot for delivering flavor while not taking 40 hours for a meal.

    We get to see a fair amount of your personality and humor through your scripts, but man, these free form vids are so fun for getting to see the real Bri and the real Lorn. Both of you are just rays of sunshine, incredibly intelligent, and seem to be really great people.

    The thing I love about your channel and Chef John (and Alton Brown back in the day) is you explain the "why" behind the recipes instead of just the "how." Anyone can read a recipe into a microphone and cook it, but it takes some real thought to explain the why.

    I just found your broadcast, have learned lot in a short time and am looking forward to learning more. Have you considered adding closed captioning? I'm in the United States (southern part) and sometimes just don't catch your every word - hate to miss anything.
