    Wheat Payasa with Coconut Milk is a typical Coastal Karnataka Brahmin recipe. The delicacy of Anegudde Ganapathi Temple in Kumbashi, Udupi District, Karnataka where devotees are served lunch as prasada of the Lord.
    Ingredients:
    Broken Wheat - 1 Cup
    Grated Fresh Coconut - 2 Cups
    Powdered Jaggery - 1 and 1/4 Cup
    Salt - 1/4 tsp
    Cardamom Powder - 1 tsp
    Ghee or Clarified Butter - 2 Tbsp
    Broken Cashew Nuts - 20-25
    Method:
    1. Wash 1 Cup of Broken Wheat 2-3 times and transfer to a cooker. Add 4 Cups of water and cook it for 4 whistles. Let the pressure release naturally.
    2. Now we need to take out the Coconut Milk from grated fresh Coconut. In a mixer jar add 2 Cups of fresh Coconut. add 1 Cup of water and grind it to a smooth paste. Now filter only the Coconut Milk through a sieve. Again transfer the same ground coconut to the mixer jar add 1 more cup of water grind it and extract the Coconut Milk. This may yield 2 to 2 and 1/2 Cups of Coconut Milk.
    3. In a vessel, melt the 1 and 1/4 Cups of Jaggery by adding 1 Cup of water. Once the Jaggery melts, switch off the flame and sieve to another bowl.
    4. Transfer the melted Jaggery to the vessel in which you are going to prepare Payasa. To this melted Jaggery, add cooked Broken Wheat. Mix everything well. Let the mixture come to a boil.
    Now add 1/4 tsp of Salt. Adding Salt will enhance the taste of the Payasa. I usually add 1/4 tsp of Salt to almost all Jaggery-based sweets.
    5. Once you see the first boil, add prepared Coconut Milk and 1 Cup of water. Let everything boil for 6-8 minutes on medium flame.
    6. Now add 1 tsp of Cardamom Powder mix once and switch off the flame.
    7. In another small frying pan, add 2 Tbsp of Ghee. Once Ghee melts, add broken Cashews and fry till they turn golden in colour. Add this to the prepared Godhi Payasa and mix well.
