your issue with the jet startup was because the hydraulics were down (the orange bar) just increase the idle throttle of your engine in the editor until it doesn't go down anymore, also, to brake you need to add braking torque to the wheels in the editor then hold b when you're trying to brake
When you make a delta wing style plane you need to have a very powerful engine since those wings perform better in supersonic regime. Think mach number >0.7

Bigger wings do not always equal better. Also if you would've changed the shape of your wings and moved them forward you could put ailerons in the back, which would improve your maneuverability. You should also make your engine bigger. Ironically I've never actually played flyout bc I didn't get the early access, but I still have knowledge from kerbal space program.
Can you make a plane that has big ol butt cheeks to either side of a big jet engine so it flies by farting? Ideally shaped vaguely like a person as a whole. Maybe someone crouching with their hands outstretched as wings and their butt in the air for thrust

Usually v-tail planes use the tail to pitch so this is a new thing for me to see.

Actually since you have canards you don't have to add ailerons, I think both are about equally effective.

Currenntly there isnt a way to start a jet engine if youre standing still. If it shuts down increase the idle throttle.
Simpleplanes and jno would have been so much better with cross section editing like the one in this game
