I make tortillas regularly and don’t have a press. I use a ziplock bag, cut the sides so that it can open up and be folded over the dough, then roll them out with a rolling pin. I’ve also used beers (full, so there’s weight in the can), jars, anything really. I’ve made them without the plastic, but it sure simplifies things. Homemade tortillas are a total game changer to your taco skills.
A little less traditional, i have been enjoying key lime pies on "regular" pie crust. Give it a try, a different flavor/texture from the more traditional graham cracker crust.

I have a shishito pepper plant that was spicy this year. They taste so good with a little twang.

Because I’m in Ky. So they were Ky. lime pies. Nobody will know the difference. A lime is a lime is a lime.😎
