Julia, my budget was very tight this past week. I live by myself and live paycheck to paycheck. As there were unforseen expenses this month, I was seriously concerned about having enough food to eat while getting to my next pay-day. I followed everything you did in this video, and I couldn't be more grateful! With the leftovers, I was able to eat comfortably all week. I don't feel like I had to sacrifice nutrition or had to skip meals. THANK YOU. I'm a new subscriber.

    Helpful taste tip for fajitas:
For any Mexican cuisine, if you want more flavor buy the seasoning called Sazón Goya (orange box) in the Mexican cuisine section. 8 packs should last you a while! I use only a half packet typically for 4-6 servings if food.
If you don’t have garlic, use it with garlic and onion powder. If you feel the need for salt I recommend garlic salt with it.
It is what a lot of Mexican restaurants (in the midwest) use to season their meat

That soup reminds me so much of a soup I make every once in a while. The ingredients for mine are:
    Kielbasa
    Ham (16oz. Oscar Mayer)
    Pepperoni (8-10 oz pkg)
    1 can of corn
    1 can of diced tomatoes
1 can of peas (or green beans)
    8oz. elbow macaroni
    Green onion (scallions)
Beef, chicken or vegetable stock (32 oz. or enough to cook noodles)
Chop/cube kielbasa, ham, pepperoni, and onion up. Throw into big, deep pot with bout a table spoon of olive oil. Let it get some brown onto sausage then add all remaining ingredients including liquids in cans (adds so much more flavor). Bring to boil then lower temp to simmer. Cover and let simmer until noodles are done. No need for seasoning bc there's literally so much flavor from everything you're putting in but you could add if you want. This recipe is so versatile. You could change it up and add just about anything and it'd taste just as delicious. That's why I love this recipe so much. You can not mess it up. Give it a whirl and see what you think 😊. I'm sure you won't be disappointed.

@@JuliaPacheco I've been calling it 'Italian gumbo' bc tbh didn't know what else to call it and came up with the idea by putting what you'd put on a pizza into a soup (hints the pepperoni, ham, sausage, onion, tomatoes (and noodles to replace the dough)) and adding a few other things to add more flavor and....pizzazz I guess you could say 😊. I just wanted something completely different. It actually turned out amazing and quite the hit with the family, so win, win 😊. I, personally, can not get enough of it when I do make it and make a pig of myself which is why I don't make it that often 😂.

My daughter's favorite recipe I make is macaroni pie. The cost depends on how much you want to put into it and how much you're making, but it's relatively cheap. 1 box macaroni, 6 eggs, milk or heavy cream, shredded cheese, salt, pepper, chili powder. Cook macaroni. In a pie dish, layer mac and then layer shredded cheese. Repeat. You can change the taste by using our combining different cheeses. Then take your eggs (usually 4-6) and whisk in about a cup of milk (just eyeball it) or heavy cream. Add in spices (again eyeball it but don't be shy here). Once it's all combined SLOWLY pour evenly over pie. Bake at 400 until eggs are cooked. If it's too soupy it ain't done. I usually start with 15-20 mins and just watch from there. Serve like you would a pie.
This is cheap and easy to feed a crowd, great as leftovers and freezes beautifully. This recipe is originally from Scotland. The original uses sweet dumplings and goat cheese (my ancestors were sheep people). However my great grandma modified this during the great depression which is the same recipe I use today.

So many "cooking on a budget" videos include buying a bunch of cans and packets and mashing them together. Maybe I'm old school, but I always felt that starting from scratch is cheaper, except you have to have some things in your pantry and keep staples, like onions, garlic, potatoes, etc, on hand. You impressed me when you started off with a scratch marinara. (Yes, I count using canned tomatoes as scratch, if it's good enough for nonna, it's good enough for me.)

I loved all the recipes. About the green bell pepper! In my old age, I just don't like the taste of it anymore! When colored peppers go on sale, we slice all of them and flash freeze (lay them out on a cutting board or baking sheet and let them freeze. Once frozen put them in a bag and use how much you want when ever you need them! This way they aren't all clumped together in the bag!!) Same with onions, same idea! TFS
