The Ride1Up Prodigy XC is a great electric mountain bike for riding cross country style trails. It comes spec'd like a $2000 non-electric mountain bike with a bonus Brose Mid-Drive high torque motor.

This 50lb. mid motor class 3 and partially camouflage-electric is what I'm looking for. "Is a very high cadence of 80 to 90 rpm will reach 25miles per hour or even higher? Maybe torque sensor is not good for people older than 65 ? 🚴♂
I would not say it is an age issue. It is a what do you want the bike to do issue. If you want to ride at speeds over 20mph most of the time then a cadence sensor bike is probably a better choice. If most of the time you'll be riding at speeds under 20mph then torque sensors work great. The gearing of the bike has a lot to do with it also. E-Bikes under $3000 always seem to save money on the pedal driveline and go with 7-9 speed systems. These never have the range needed for both slow and highspeed riding. A 10-12 speed pedal driveline with the correct chain ring size would give more range and allow a more reasonable cadence at 25-28mph.
How is the ease of pedaling on trails like in your video (or easier) compared to a fat tire bike with torque sensor like an Aventon Adventure .2? Also, when the battery does run out, how difficult is it to pedal on fairly flat paved surfaces? I see its on sale now for about $1500 but at age 67 but fair shape ( 5'8", 175#) I'm not sure yet of the trade off of its price and virtues vs not having a throttle. Your trail riding comments makes me think maybe it is.
The Prodigy XC is far far better than an Aventure 2 for actual trail riding. The mid-drive handles slow steep climbs much better than the hub motors do. I have ridden our Aventure2 on mountain bike trails to try it. The motor is really not happy at slow rpm’s crawling up steep climbs. That is the condition where mid-drives shine.
Mid-drives are much easier to pedal motor off than hub motors. You don’t have all the drag from the in-powered motor. You could ride a Prodigy all day like a regular bike no problem. 1 mile on an unpowered Aventure 2 absolutely sucks.
The Prodigy XC has no throttle. I have ridden 1 mid-drive bike that had a throttle. It’s like driving a manual transmission car. You have to shift a lot to keep the motor in a happy RPM range. This is why most mid-drives don’t have throttles. Throttle only riding is one of the things that hub motors do a lot better. You get a nice proportional 0-20mph throttle speed range without shifting.

How many hours trail riding, as shown in the video, did you get on one charge?
It's got enough for a 15 mile trail ride riding in the Sport or Boost PAS setting where it's making things really easy and fun. I don't think it would make it 20 miles on a true mountain bike trail. It's 500 watt battery does not have the range of a Specialized Turbo Levo Comp with a 700 watt battery. If I wanted a bike to do longer trail rides I would pick something with at least a 700 watt battery.
