About the Private Investigator take;
Yes, it is "Paid Stalking". But these people aren't weirdos or anything, they are just doing there job. Plus, if you want to know if someone is doing something sus(someone is cheating, someone is stealing, someone is a killer etc.), how can you actually figure this out? Police can't help, it's just an idea. So it's either you snoop around, or you hire someone who snoops around professionally.
Example: You can't personally say nor call to the police if your husband or wife is Committing adultery or concubinage, that would be illegal, a witness is always a necessary requisite in having a case with your significant other, such as a private investigator.

I would assume the body language is pretty much just what detectives use to decide what questions to ask - like how intense to be and how much pressure to put on (rather than evidence or proof itself, a clue on how to get it)

You haven't run a business where you have to both collect the money and then distribute it out to workers, pay expenses, etc... You usually need an accountant to scale up.

Private investigators and bounty hunters and these sorts of things are kind of odd and from an older time, and the people that do it can be a bit strange in their own right, but cops usually don't have the resources or invested interest to do it at all or properly, so they are necessary. Even lawyers are weird in this regard, like why can't the state handle everything appropriately? Obviously there are a lot of reasons they cant but in a perfect world they should.
