    1 4-5lb Bone In Rib Roast
    1 stick butter
    1 quart beef stock
    1 cup red wine
    1 tbsp diced rosemary and thyme
    1 tbsp herbs de provence
    1-2 tbsp garlic paste
    salt/pepper/garlic/onion powder
    Smoked Paprika OR BBQ Rub (Killer Hogs THE BBBQ Rub)
    celery/onion/carrot
    Slurry (2 tbsp corn starch + 4 tbsp cold water - to thicken gravy)
    Directions:
    Allow roast to come up to room temperature (about 2 hours). Season heavily with good quality salt. Allow butter to soften on the counter for a while before making your compound butter. Mix 1 tbsp diced rosemary and thyme with 1 stick of soft butter, garlic paste, herbs de provence, and seasoning. Once roast is close to room temp, finish seasoning with onion powder, garlic, black pepper, and optionally some BBQ rub. Next, rub the compound butter over the roast. Preheat oven to 500 degrees. Place roast in roasting rack after adding stock/wine/veggies/ and herbs to the bottom. Place in the oven for 5 minutes per pound and then turn the oven off and set the timer for 2 hours. Allow the roast to rest for 30-45 minutes before slicing and serving. Strain the pan drippings into a saucepan and use for gravy. Use slurry to thicken the gravy if needed as seen in the video.

      Why do people call meat that's not ( prime ) prime rib? I've been a meat cutter my entire working life and I don't understand why call choice grade ribeye roasts prime. Prime is a grade of meat. You have the bottom grade select beef then a step up choice then the next level up prime and then the best of the best Kobe beef way better than prime. I have never understood why call a grade of beef something it's not. I love choice standing rib because you have to be a very well off person to afford Coby beef at $500 a pound. Maybe one day. Lol. Please answer this question. Thanks in advance.

      I will def be buying the book, but if you don't mindy asking- what type of red wine is best for the recipe? I don't often cook with it and want make sure I'm using one withe right properties (sweet, semi, dry, etc)

    Used your Au Jus recipe and prep method for the prime rib but I cooked it a little different, I cooked it on my smoker at 250 for 3 hours then seared it and it came out perfect, pink throughout and very juicy and tender. Family loved it for our New Years dinner, thank you!

    I had a 2-bone, 4.5 lb roast.
    Baked on 500F for 22 minutes before shutting it down for two hours and 30 minutes of resting under foil. First time making au jus, and everything turned out perfect. Thanks and Merry Christmas!

    I tried this with a steak. Covered in butter and seasoning placed on 500 degree oven for ten minutes, turned off and let it sit in oven 10 minutes. It was the best juiciest steak I have eaten. I plan to try with prime rib as well.

    I did a 6lb prime rib roast in the smoker. For smoking I prefer a reverse sear. So I smoked it for 3 hours at 225 degrees (internal temp at pull was 120), then seared it in the oven after it rested for about 10 minutes. Turned out great.

    Looks amazing! Question: Does the time you leave in the turned off oven stay the same for a 10 pound roast? (2 hours) Also, that means 50 mins in a 500 degree oven first, right?

      I have read that the “no peek” method only works for 8 lbs and under. My guest list keeps growing every year and the roast keeps getting bigger and bigger. This year I bought a 13 lb roast. Not sure what to do

      @@tractorp2255 wrap the whole rib roast tightly in aluminum foil, then microwave on the highest setting for 180 minutes and then DO NOT OPEN THE MICROWAVE AT ALL until 2 hours has gone by after the foil wrapped toast has finished cooking for the 180 minutes! 🎄Merry Christmas!

    Hey I have a 9.74 lb prime rib.. what temperature do you recommend I cook it on and for how long? I would like it Medium Rare 👌🏾

      He said in video put in oven at 500 degrees at 5 mins per pound. Possibly if u want it meduim rare do 4 mins. I personally do 3 mins

      My wife is the same way.
      Loves her steaks well done. Anything less is "raw" to her.. I still love her, despite her foibles. 😁
      But still, well done is blasphemy to true beef eaters.

    Why didn't you use a roux versus cornstarch because cornstarch makes your sauce look glossy and it's usually used for asian recipes

      a slurry is used in a lot more than just Asian recipes.. I used it because I wanted a thinner Au Jus rather than a thicker gravy... personal preference for sure.. you could do it either way

      Honestly, I think it's because younger generations have either abandoned the idea of getting lots of family together or simply don't have big families anymore. Getting ready to have family over for a 12 pound roast. Everyone tested covid negative.

    Man! Looks amazing! And I needed a good Jus recipe. This is what I will use for my Prime rib this year. This method is how I learned to do mine too, the 5 minute per pound thing! I'm really glad to know how to get the Jus right. Hi prime rib was always good because of this message, but because you never quite hit the mark. I think I know now how to do it.     Thx for the recepi i will use low and slow till my desired core temp since i want medium well. Easier for a first timer to control i think and then bang on the heat for crust
