Ingredients
Base
280 grams of oreo cookies (any chocolate chip cookie)
70 grams of melted butter
Chocolate Cheesecake
340 grams of dark chocolate
600 grams of Philadelphia type cream cheese at room temperature
200 g of icing sugar / icing
2 tsp vanilla extract
pinch of salt
200 ml of cold milk cream
The Chocolate Ganache
130 grams of dark chocolate
130 ml of milk cream
Others
Strawberries and Raspberries to decorate
preparation:
For the base
1. Crush the oreo cookies in a processor. Pour the crumbs into a bowl and add the melted butter. Mix well and pour into a 23 cm detachable mold. Press well against the base evenly. Refrigerate for 30 minutes.
Chocolate Cheesecake
1. Melt the chocolate in a double boiler and allow to cool slightly before using.
2. In a bowl, put the cream cheese at room temperature and beat for a few minutes until it is creamy. Then add the icing sugar and mix well.
3. Incorporate the vanilla extract, the pinch of salt and beat again.
4. Then pour the melted chocolate into the cream cheese mixture. Continue mixing until obtaining a homogeneous cream. Reserve.
5. In another bowl, beat the heavy cream halfway. Then pour over the cream cheese and chocolate mixture and integrate with enveloping movements.
6. Pour over the biscuit base and distribute evenly. Refrigerate until firm about 2 hours. approx.
The Chocolate Ganache
1. Heat the milk cream until it is about to boil.
2. In a bowl place the chopped chocolate and pour the hot cream over the chocolate. Let stand for 3 minutes and then mix well.
3. Pour the ganache over the cheesecake and move the mold so that it covers the entire surface by tapping it lightly to remove any remaining bubbles.
4. Refrigerate for 1 or 2 hours or until the chocolate is firm.
5. Unmold the cheesecake and decorate with red berries.
