In order to see any one of these endings, there must be one person left alive. Then, when you go out to scavenge, the bunker will be left unoccupied. If you do not have a padlock with you to lock the bunker while you go out, you're risking someone else coming along and taking the bunker for themselves. Do note that if the person scavenging dies (and they do not come back), then you will not get one of these endings. They need to actually survive out there.
If you keep scavenging after you get the tank ending, eventually they’ll comment that they saw some sort of vehicle in the distance. Then you send one of the kids over there and it’ll be an ice cream truck

But there’s a couple times where ted or dolores is dead in the notebook
That’s because one of them was out scavenging when the person inside died, leaving the bunker unattended

I had sent Dolores out on an expedition to get food before Ted died, so when his starvation got to him the bunker was left unoccupied for two days

If I remember correctly you need to complete the “Scout’s honor” challenge, and then right click on the items to change it
