    I dont know where to start.
    After years of cooking and using just whatever knives i can easily get my hands on cheaply. Mainly cause i never thought i was good enough to use a high quality knife regardless of how much easier it makes the job easier. But after all those years of basically honing my knife skills and constantly being told to move into the cooking career fields by everyone ive cooked for. My inlaws gifted/traded me my first high quality knife, The Burrfection launch edition gyuto. I really did cry using it because after 20+ years of using $10 or $20 knives. The comfort of it, the feel of it, the control of it, the story behind it.. was over whelming when i was cutting potatoes and after few dozen cuts tears of joy started rolling down my face and i had to stop and take a breather 😂🤣😂. It was the best intro to quality cooking tools and the knife ill be most proud of and be able to brag about. Thanks Ryky merry burrfection for designing such a beautiful knife and creating such wholesome content ❤️

    Hello from Australia, im not having a fun time trying to sharpen my knives from dinerite. Unfortunately they weren't sharp when they arrived. They told me they can't be sent sharp because of freight. Lol bs but i have no idea what angles they are supposed to be. There a stainless steel fully forged knife harness is well into the 60s. Im thinking of 10/15° your advice would be appreciated. Thanks

    Hey RyKy, can you do a video on comparing the different naniwa stones head to head?? Like the pro series vs. the super series? like 800 grit vs 800 grit, etc. My understanding is they are both splash n go stones but like one type is resin bonded and one type is magnesium bonded or something like that. Can you do a comparison, explain the differences and advantages/disadvantages of each type and how they feel etc. Because there is no video on youtube comparing these, and I am really stuck on which one i should get and what differences are other than resin bonded supposed to last longer?? I know the super series is the old chosera and the 800 is your favorite stone, is the 800 pro series just as good??

    I’m just found your channel and love ❤️ it I’m am interested in a good Japanese complete knife set including steak knives for my kitchen and also a complete sharpening kit. I’m willing to pay for a really good set that will last for ever and do not want a cheap set looking to spend around $1000 give or take

    Something that I really want to ask: I bought a knife, 180mm chef’s knife made by KAI called, Seki Magoroku Moegi. It says that it is high carbon stainless steel, made in Japan. I’m wondering, have you come across this brand before, and, if so, what have been your thoughts ?

    Not strictly relevant to this video, but ... I broke down and bought an Edge On Up BESS sharpness calibrated tester. After a couple of on-and-off years of hobby-ing at knife sharpening, following the instruction, recommendations, and examples on this site, I sort of regret to inform that now anything over 100 BESS is not good enough for me. A lot of people have trouble with "the angle", or maintaining a nice even bevel angle. It is like learning to ride a bicycle. It may seem impossible at first, but if you want to, you'll get it.
    I recently sharpened a Shun to 40 BESS, changing the original 14 degrees to 12, because I use it for light work only. some of my other recently sharpened knives are in the 70 to 80 range. You DO have to be careful how you use knives, or you end up with repairs, and you will, if you practice, learn to adapt different knives and different sharpness to different uses, but you really only need three or four different geometries for domestic use, unless you just like cutlery.
    You really only need four or five whetstones (or seven or eight, heh heh), and you do not have to wear them out anytime soon (I rarely flatten). My favs are Debado 120 grit for small chips and dings, a Chosera 400, 1000, Green Brick of Joy (hard to learn, but superb!) then an Arashiyama 6k, and a Kitayama 8k, Imanishi 10k, with at least 40 strokes on a leather strop. Once your knife is sharp, and you do not abuse it, you can refresh it on a high grit for maybe 10 strokes, and 40 on a strop. Your "real sharp" comes in on a strop.
    For instruction, again, refer to Ryky's videos, and practice. He gives all you need to know really solid advice! Happy bike riding!
    P.S. If you go for a sharpness tester, make sure you order one or two spools of their calibrated thread. It is possible to use monofilament fishing line (I picked that up as a money-saving tip from another video), but you have to kind of recalibrate - I'm guessing that four pound test Spider Wire is going to be pretty close to the Edge On Up (very expensive) line. Their stuff, you get maybe 100 feet for like $22 bucks; fishing line is like $8 bucks for over 200 yards. It's for fun, objective moral support or confirmation. Once you "get it" on sharpening, you can just feel whether or not you have your razor sharp edge. It's a pretty distinct little "bite". It's also possible to rig up something to hold a sheet of junk mail paper in a frame resting on a kitchen scale, and look at the pressure required to slice it. That way, you can test the length of the edge. Not very precise, but it will give you a good comparison. Some Swiss or Swedish guy constructed a machine that will uniformly slice calibrated paper and will graph the pressure required all along the length of the edge (if you have $3,000+ bucks to splurge - it's probably designed for commercial establishments).
    I'm shooting for 20 BESS, then it's off to another hobby.

      @@Burrfection ---- Had a good teacher, guy. Thank you. I admit, the Shun at 40 surprised me. It's interesting that the feel of the edge around 80 and lower does seem to have a distinct "bite" to it, different from an edge at 120. It's like it talks. (But any "nick" will go through three layers of skin and bleed for 10 minutes.) I tested a Yaxell "Super Gou" (4.75" utility) out of the box, and got 70, which also surprised me. The Shun (paring knife) tested 250 OTB, which was ALSO a surprise, but right in line with "high-end cutlery". It sharpened up easily from 1K to 2K to 6K to stropping. Three pound test fishing line is weaker than the calibrated line, six pound line is stronger. I haven't done all the math, because I don't know if the BESS scale is straight line arithmetic, or some kind of curve. I'm just amateur, but I apparently do study well. I've referred back to some of your videos more than once!
