The second and third are okay. 4th and 5th shaves are noticeably duller and you should replace after about 6 or 7 shaves. 100% of the time.They cost like 5 cents anyway.

That's the way you're supposed to do it, seen it done on forged in fire plenty of times (that's a tv show), and none of those blades were as sharp as a razor blade. The reason the rolling method didn't work is probably due to the friction of the folder.

Chef here, initial sharpness is the least important factor when buying a knife. It's a scam. You can sharpen almost anything to a razors edge. How long does it hold its edge? How hard is the steel? Carbon content? Flex? Rust resistance? Grip? Ergonomics? These are the real questions you should want answered. This particular knife is made of a stainless steel with a hardness of 57. It is pretty standard for an average quality kitchen knife. Not suitable for a professional kitchen as you would be sharpening it every 15 minutes but should be fine for a home cook. Unless you cook alot. Pretty easy to sharpen though. Good knife for beginners to practice cutting and sharpening. The shape isnt my favorite but shape is more of a subjective thing based on your technique.
@@PearlCrown292 that's because the wire used to test the knife broke because the knife was sharper. It really works what the person with the main comment meant is that the knife would get dull quickly after a bit of usage.
I hate being a hater but the technique you use to sharpen knifes isn't at all good, and your "cut" technique, knifes are supposed to be used in a saw like motion, using the whole blade, and when sharpening you want to do single strokes at a time, so the blades sharpness stays consistent along the whole knife. Great content tho.
great work, 15°/30° angle means that it won't hold an egde for long. Usually people go 20°/40° for "usage" edges. I personally prefer very sharp edges, makes food prep so much nicer :)
Many forged knives with good metallurgy and proper temper are capable of 63+ HRC and can hold a proper edge at 10-12 degrees per side, especially the ones with either high-carbon steels or newer powder-based steels like ZDP189 or CPM-S110V. Compared to a 'good' conventional German knife which can only hold a 15-18 degree edge without folding the edge over quickly. Utility/pocket knives are typically 20 DPS and require a coarser finish grit to get some 'bite' for things like cutting rope, boxes, etc. My current EDC is a Spiderco made in S110V sharpened on 4000 grit japanese wheel at 12 DPS and holds its edge with a quick strop every few weeks for around 4-6 mos depending on how much demand I put it through. It will pop hairs smoothly off my arm as a test. On the BESS tester it is typically at around 50-60 grams. Keep in mind, these superior steels are better at sharpness, but give up some amount of 'toughness', meaning that it is easier to chip out under extreme demand on harder materials, where a 20 DPS utility blade with crappy steel will just bend rather than chip out. Takeaway: Choose the right tool for the duty demands.

If you spend good money on a quality knife, then my philosophy is spend the time you took to earn the money to learn to sharpen them. This guy has about a hundred videos of sharpening a knife and always some machine to do it. It tells me he’s not the guy I’d want sharpening my knife.

In the long run it’s better to just learn how to sharpen knives the “hard” way rather than getting a gimicky device to make it easier, you’ll only damage your blade in the long run.

I bought a worksharp knife sharpener that's got a stand, a spot that holds the knife in place, and all that, and it works on a type of pivoting lever system. It actually works really well. I used it a few times on bigger knives, and when I used it on a smaller knife, the knife was too small to place in that holder, so I had to free hand it. The way the sharpener works actually helped me overall. I learned what angle to keep the knife at and developed a kind of system that works perfectly fine for me. I get my knives sharp enough to shave with. I want to get some real sharpening stones now, but I would say those gimmicky devices are great for if you're just starting out and learning, and once you learn how to do it, then you can move up.

Hardly..... That was an angled rest that the knife was leaning against..... Typically designed to sharpen the edge, especially with the beveled rolling Stone...... Theres not a blemish on that knife, I guarantee you..... That being said, there are definitely better knives and better sharpeners on the market.

Remember, folks. You don't need an expensive sharpener. You do, however, need a good quality knife with good edge retention. You can sharpen a stick of butter but it won't do you any good if it loses its edge the moment it touches something.

Old school people did not have a "safety net" upon which to depend. So they had to be competent and competitive.
