That looks amazing And delicious and I know it’s your take,, we make the egg in nyc delis for a bacon, egg and cheese different than an omelette. crack the eggs in the pan like a sunny side up egg and gently mix the egg and yolk so they stay mixed but separate. Don’t think it has a name as to what this style of egg is called. It’s not like an omelette. The egg isn’t scrambled before it’s cooked. BUt still looks delicious and I’m sure there are places that make it like you did
