You can use any cheese you find there.. cottage cheese or processed cheese will be the best..

Red pepper is same as capsicum (Shimla mirch)? I don't have red pepper. Can I use green Shimla mirch? Will the taste be diffrent?

Yes you can use Shimla mirch but only in small quantities as it has a pungent smell to it...
It would be best if you can find large sized green or red chillies which are less spicy..
