The technique of two subd modifiers is great, but I don't understand how you can keep smooth only certain areas of the model without applying the modifiers. With the subd modifier 'simple' turned on the model may have far too many hard edges. I think this is the main problem when using this technique. Perfectly round holes and perfectly cylindrical shapes are also a bit of a problem because as I understand it takes a lot more geometry to get them. The author of the video you refer to I don't think explained these steps well.
