I'm an absolute noobie, not just to Them's Fightin' Herds, but to fighting games in general. I quickly found myself overwhelmed by most characters, but was drawn to Tianhuo. Who would you suggest I try to learn to get the system down?

Most people point towards Arizona and Oleander. Though, you should use who YOU think suits yourself( I was drawn to Tianhuo as well and stuck with her).

Alright, that's fair. I figured knowing a few other characters might help me understand the mechanics a little better. I was fariyl certain Ari was the fallback for learning the basics, but I wouldn't have guessed Ollie. I'll give the two of them a run through and see what I can pick up, but you're probably right, Tianhuo will likely be my main.
