Buddy I can relate to your first expression of Assamese food .In short , the over consumption of Bhuna masala food of Delhi over year’s have killed our taste buds .. we have forgotten the real taste of actual food. The rice we eat in north ( so called good looking Basmati ) has no taste, one of the best rice I had is from Assam.. You should try to eat at a local home ,try duck meat cooked with Assamese rice with a dash of local nimbu. Sita ram diwan concept 😅 good analogy.

I don't know who and how national and international food vloggers are always misdirected in guwahati. Reboti chat house is one of the most overhyped place to eat a roll or noodles. Same with prem's momo s. Best assamese thali in whole guwahati is served by Mishing Kitchen without any doubt. Best Chinese( budget food) including noodles and momos is served in Johns Kitchen. For veg, corn cheese momo or tandoori momo, Grill republica of Uzan bazaar is always the best. And most importantly the vlogger must find a local person fluent in hindi and English, who actually knows the names of food items in other languages. Here, in this video, the fish was cooked with elephant apple which is one of the most ethnic food to be tasted in assam. I was literally shouting from this side that... That's probably bhangun mass with ou tenga. 😢😂.
Try duck in Assam,and chitol mach,aari mach(fish) you will love it and it is not that correct bro in our house like me many Assamese people don't eat pork,only eat chicken,mutton duck...and fish,
