Fry Gola Kabab Qeema Written Recipe :
Ingredients :
Beef mince ½ kg
Raw papaya 2 tbsp
Yogurt 4 tbsp
Onion brown and grind ½ cup
Ginger garlic paste 1 tbsp
Green chili grinded 1 tbsp
Nutmeg grind ½ tsp
Mace ½ tsp
Allspice 1 tsp
Piper cubeba grind ½ tsp
Cardamom powder ½ tsp
Salt 1 tsp
Chili powder 2 tsp
Clarified butter ½ cup
Butter 2 tbsp
Coal for smoke
Onion for garnish
Ginger for garnish
METHOD :
Marinate beef with raw papaya, yogurt, brown onion and all the below, leave it to marinate for 2 hours. Heat ghee and butter in a pan, add in marinated mince, cover and leave it to cook on very low flame till mince tender and dry, then give dum of coal and cover. In a fry pan, add ½ cup ghee, 2 chopped green chilies, 2 tbsp ginger julienne, add in prepared keema and fry well for 5 mins, remove, serve in a karahi, garnished with onion rings, ginger julienne and green chilies.
Bhindi Jalfrezi Written Recipe :
Ingredients :
Bhindi thinly julienne ½ kg
Capsicum julienne 1
Tomatoes julienne 2
Green chilies julienne 3
Onion chopped 1 large
Ginger garlic 1 tbsp
Salt 1 tsp
Chili powder 1 tsp
Black pepper crushed ½ tsp
Mustard paste 1 tsp
Ketchup ¼ cup
Water ¼ cup
Tomato puree 1 tbsp
Allspice ½ tsp
METHOD :
Heat oil in a karahi, and deep fry your bhindi little little, keep frying for 5 mins on fast flame, remove, fry capsicum for 1 min, remove, fry onion for 2 mins with green chilies and remove. Heat ¼ cup oil in a wok, add ginger garlic and tomato puree, crushed red pepper, mustard paste, ketchup, chili powder, salt, allspice with ¼ cup water, fry well, add all the fried veggies with tomato julienne, mix all well, gently remove and serve in a sizzler.
