ROGHNI QORMA WRITTEN RECIPE :
Ingredients :
Chicken 1 kg
Chili powder 3 tsp
Ginger garlic 2 tbsp
Desiccated coconut 2 tbsp
Poppy seeds roasted and grind 2 tbsp
Almonds roasted and grind 10
Salt 1 ½ tsp
Yogurt 1 ½ tsp
Brown onion grinded 4 tbsp
Oil ¾ cup
Roasted and crushed coriander 2 tbsp
Black cumin 2 tsp
Nutmeg grind ¼ tsp
Mace grind ¼ tsp
Green cardamom grind ¼ tsp
Allspice ½ tsp
Cloves 6
Cinnamon 2-inch piece
METHOD :
Marinate chicken with yogurt, ginger garlic, chili powder, and salt for 30 mins. Heat oil, add whole spices with marinated chicken, cover, and cook on slow flame for 30 mins, add in the roasted and grinded masala, mix with water, cover, and cook till meat is done. Lastly add brown onion, allspice, and coriander and let it remain on dum for 10 mins.
WARQI PARATHA WRITTEN RECIPE :
Ingredients for Paratha :
Flour 3 cups
Sugar 2 tsp
Semolina 4 tbsp
soda a Pinch
Eggs 2
Oil ¼ tsp
Milk powder 3 tbsp
Salt ½ tsp
Water to knead
METHOD :
Knead altogether in a bowl, leave it covered for 1 hour, make medium-sized balls, roll to saucer size, apply ghee, then flour, roll like a Swiss roll and form into a ball again, re-roll to a large paratha, shallow fry, serve with korma.
