The fact that Jamie "Mr. Chili Jam" Oliver is so confident at making ramen WITH soba noodles is baffling to me
If you look over Oliver's career it makes perfect sense. He tried to shame US school lunch programs, but his substitute menu didn't meet minimum nutritional guidelines. Tried to turn poor kids against eating chicken nuggets by showing them how they are made, then couldn't believe it when they didn't care.
The baffling part for me is that he took miso paste and cooked it for 4h in broth. I would be surprised if I could taste any miso in that sauce.

@@PotatoSofi Both Nigella Lawson and Gordon Ramsay have made the same mistake as Jamie Olive Oil in just adding the miso paste to boiling water, which kills the flavor, haiyaa. Uncle Roger has mentioned at least once miso tare must be made separately from the broth.
Watch Jamie Olive Oil's atrocious attempt at making Thai Green Curry. Uncle Roger was totally baffled at how he could be so clueless yet confident.
@@verentyee5413 Like a lot of chef's, I think it's a matter of focus, the kind of cooking he got famous on was eurocentric sustainable cuisine. So things from outside Europe he gets close enough for his english audience, but he lacks Ramsay's flexibility and willingness to learn to do it right from masters before trying to change it.
I am not asian myself but when I see videos of white chefs trying to capitalize on the interest in Asian cuisine by releasing recipes like this it kind of annoys me. Jamie is just putting in random ingredients that are generally Asian like the miso, kimchi, soba and all this other crap so that people who don't know Asian food are convinced its legit. Jamie obviously is not at all interested in learning about the cuisine himself and trying to create something authentic or he would have done a much better job. In his position he should do research and make something properly or not make it at all, these shitty random approximations of the real thing are just annoying and shows lack of respect.

Japanese here. Putting spinach in ramen is pretty common among special variant of ramen which is called 家系 (Iekei). These ramen shops all share the same root from 吉村家 (Yoshimuraya), so that's why they are called "ie" (家 coming from the 3rd letter of 吉村家) and "kei" (系 literally means series). Because Yoshimuraya used boiled spinach, all other iekei ramen uses it as well. But the amount of spinach Jamie put in ramen just cracked me up. And the use of soba was outrageous. It's like making a hotdog and and call it a hamburger in the U.S.
Im personally not a fan of spinach in ramen. Its okay wont complain if im served just a little in my ramen. Doubt it ads much flavor or texture probably just increases the volume and adds a bit of healthy veg. But the way jamie added a literal compressed ball of ramen is so weird just big mouthful of spinach super weird unless he uses chopsticks to break it apart while eating. But even then breaking it apart before serving is probably way better
@@erickellar5867 Iekei is my favorite type of ramen, and I think the spinach actually works really well in it. They generally don't put in a ton- it kind of gets saturated with the broth, and tastes very salty and strong. I don't think "healthy" has anything to do with it- iekei is not about healthy, lol.
It speaks volume of Jamie's culinary knowledge that he can't tell the difference between soba and ramen noodles.

As someone from the UK who grew up in the era where Jamie Oliver was seen as some kind of healthy food Messiah, I can't help but wonder if he thought soba noodles were some kind of healthy alternative to ramen noodles, without realising that ramen is the name of the noodle and not the dish 🤔 Would also explain why he just boiled the pork without flavouring it, as well as the ball of boiled spinach (and lack of MSG 🤣)

If you want healthy food, than drop all the noodle dishes which are generally juts salt and fat with lots of low quality carb. You should eat ramen for the taste, not for the health benefits.
@@MrKrtek00 I would say that there are ways to make it a tad bit healthier, especially when the choice is between something like less sodium or not being able to eat it at all. But using soba noodles in a ramen is definitely not one of these methods.
And for people that *can* eat the originals without dying, why would you ruin a work of art? Just eat it the way it was supposed to be made! The traditional ingredients are there for a reason!
The Kimchi portion made me laugh because when I went to uni in Japan, we had a korean friend who always pinpoints the Kimchi Miso ramen on menu at local ramen shops and would go on a rant about why it's wrong to combine both Korean and Japanese and that it made no sense..... But he WILL get that exact ramen despite complaining about it.... Yould think he would get something else on the menu....

Honestly Chef Brian is right - kimchi goes well with everything. Adds a spicy kick to the soup PLUS you get to eat kimchi. Win-Win.

Pretty sure my ancestors had no idea what ramen is. But I'm all for the ancestors comforting each other and supporting Uncle Roger. -- Some of my cousins probably do know about ramen. (I'm sorry I've only had the packaged dried stuff, but it is edible. Id love real ramen.) So again, yeah, crying ancestors comforting each other sounds like a very good thing...we just wish they didn't feel like crying. Joyous ancestors having. a fine tine together, that's more like it.

Miso should never be boiled for hours. In fact, whether you're making a soup or a miso based stew, miso should ideally, be stirred in last and served without putting the soup in a roiling boil.
Because that would destroy the enzymes in the miso that's good for health.
Also, if you ever had bad miso soup, it's probably because there isn't enough miso in it. I tested this theory with my sister and dad, both picky and opinionated eaters who disliked most miso soups except for the ones served in higher end restaurants. They never like my miso soup, until I tripled the amount of miso I put in.
Dad actually has a more refined palate, so if he says something is good, it's definitely good. Sister is just picky, lol.

Generally the Chashu is a separate thing to cook, gently braising/simmering it in a really strong sauce, chilling overnight, then slicing and reheating right before serving.
The hate crime incident with Nigel is legit. That he's able to laugh about it is impressive. I'm a little surprised too, cause Nigel is not exactly a small guy either.

I recommend watching some videos by “The way of Ramen”. He talks about the traditional structuring of ramen, explains the concept of “Tare”, as well as touches on some nuance. 10/10 best starter ramen channel.
Absolutely. I made Keizo's recipe that Way of Ramen showed a couple days ago and was the best ramen I ever had.
And that was with store-bought noodles... because I royally fucked up when I tried to make my own.

“Sodium Bicarbonate” aka Akaline, the key element to Ramen Noodles just for those who don’t know. To make it, you just bake your baking soda and mix it with water, from there what you have in Japanese is “Kansui”
Kansui is different but you can uses baked baking soda to do the same thing
Sodium bicarbonate *is* baking soda. Baking it creates sodium carbonate, a stronger/higher pH base. That's what you need for ramen noodles.
I've been loving your videos so far, lately I've been watching a lot of cooking videos and reaction videos by chefs. Suffice to say I've been learning a lot! This video was pretty funny and informational, thank you!
I just found you the other day, and I have started to binge all your videos because your commentary and insight is just amazing!!
In ramen videos like these it definitely feels like production deadlines are superseding quality and respect of the craft. People think ramen is simple enough that you can just follow a recipe on your first try and get it right.
The first time I tried to make tonkotsu it was a pretty glorious failure. So I broke it down into the ajitama, chashu, and the tare/broth/aroma oil. Worked on making each thing individually until I was satisfied with it. Then put it all together the next time I did it and it was amazing.
I took a lot of inspiration from Adam Liaw's Ramen School series and the Way of Ramen RUclips channel. Also took the scallion oil from Chef Wang Gang as the aroma oil.
Jamie creates dishes like my drunk ass at 3 am coming home from too many beers. Put some left over Kimchi in there? Sure why not. Those last two ham slices sitting in the fridge for the last couple days? Yeet them right in there. Noodles for Ramen? Shit all I got is left over Spaghetti from yesterday but sure let's give it a try. I mean it will still taste good but i wouldn't put this as a recipe in a book and sell it for 30 bucks. :D
You should start writing these cook books and call it Jamie style recipe.
He does seem to use the "clean out my pantry, fridge, freezer" method to make his food instead of an actual recipe. I love building on a "use it up" ingredient, or several, but I feel like Jamie has too many disparate ingredients to actually make any coherent dishes. Like, I have a section in my pantry for "international food" that has Mexican food components and Indian, Japanese, Chinese, and Thai ingredients. But I know which specific dishes, and have solid recipes, I make over and over again. So, I always know when I look in that section to "clean out my pantry", I know exactly what to do with those ingredients. I mean, I get it if you're at the end of the week (or month) or whatever, and you have a bunch if random stuff in the fridge, but Jamie can't even do a fried rice for that. I think the only thing I learned from Jamie Oliver is that he isn't good at planning to replenish his pantry.

The only things Jamie did right were the eggs and the kimchi. I started adding kimchi to Ramen a few years ago, and the flavor really pops. It's certainly not traditional, but it's very tasty.
The eggs are not a crime but they are definitely not authentic. You are supposed to add japanese soy sauce, MIRIN (a type of sweet cooking wine made of sticky rice), and a pinch of sugar to give it a hint of sweetness. Marinating the egg all salty and putting star anise in it is more of a chinese way of doing it
For what it's worth, kimchi ramyeon is a thing in South Korea (I believe Shin Ramyun has kimchi flavored noodles, and you might be able to find Samyang brand Kimchi noodles in Korean grocers), so no issues there.
I just noticed something that both uncle roger and you missed at 19:03. He left the chopsticks sticking into the food. If I were to have done that, I’d have been whipped to the moon and back

On kimchi as a ramen ingredient: I know it’s not a regular ingredient in Japanese ramen, but I’ve seen it included as a standard menu item in ramen shops across the US most likely because of Hawaii. Having talked to the owner of a ramen shop who learned the trade in Hawaii, it was explained to me that you see a lot of pan-Asian culinary influence that came by way of Japanese/Chinese/ Korean immigrants that settled in the islands.
For a throwback feel, dope ass video, maybe react to one of the most iconic Asian chefs: Martin Yan. The show Yan Can Cook was one of my favorites growing up, gave me a deeper appreciation for the culture, and dudes charisma is just unmatched

I know Jamie Oliver has a health food obsession. I'm guessing soba noodles were chosen because buckwheat flour sounds healthier than ramen noodles that are made with white flour.

I think the kimchi ingredient in ramen would be one of those things that is accecptable for home cooking because it's just gotta be good, but not in a restaurant because for professional standards the dish will feel like it has an identity crisis on your plate :p Which country are we eating today Korea? China? Japan? can't really pull that off in a restaurant even if it does taste great because a lot of people go to a Japanese restaurant explicitly to get some taste of Japan and not Korea or China :p

I’ve spent several years in Japan and had my fair share of ramen in many different variations. Although Kim chee is very common all over Japan I can’t say I’ve ever seen it in ramen.
The things that stand out the most are the quality and texture of noodles and the flavor of the broth. This wasn’t even close to ramen.
For most types of ramen, first in the bowl is the tare and aroma oils which he didn’t even make. The broth next. Noodles get folded in neatly then toppings placed in. Each of the toppings are excellent on their own but even better together. It’s not just a bowl filled with random Asian ingredients. You can buy better convenience store ramen bowls that you just microwave than what Jamie Oliver just presented to the world.

Jamie making ramen with soba would be the same as making lasagne with spaghetti.
Yeah but both lasagna and spaghetti are made with durum semolina right? Soba and ramen are made with different flours and ingredients. It's more like if someone said they were making lasagna with egg noodles.
The thought process was probably to find a half assed way to make the ramen “healthy”… hence the low sodium soy sauce and soba instead of ramen. Same way he tried to make his egg fried rice “healthy”.
But at what cost…

I have definitely had Kimchi Ramen in places that are multicultural Asian areas, and it was amazing. It's not necessarily traditional, but it's great. that acidic spice it brings can really perk up the flavor a lot.

Yo love your videos but I had to mention this. It's sodium carbonate, not sodium bicarbonate. Sodium bicarbonate is baking soda, with PH around 8.3, sodium carbonate has a PH of 11. It's used to make many alkaline noodles including ramen noodles. If you try to make a noodle recipe that calls for sodium carbonate with bicarb you're not going to get the right texture in the end product. (also just general knowledge: PH is logarithmic, so PH 11 is 1000x more basic than PH 8. Each integer in the PH scale equates to a 10x interval)

The kimchi looked weak and be careful just adding it. There's different stages to kimchi. Fresh kimchi is always with rice, when it starts turning let it sit, and when it's fully "soured" is when you use it for soup, fried rice, etc.
Guess anyone can become a TV chef if they have enough enthusiasm and the ability to throw random crap on a plate calling it a dish
