I keep my speed wings unclipped due to having multiple speed wings to choose from to fly. Having the wing connected to the harness increases the amount of rubbing with the risers on fabric etc. I also like how it allows me to setup up each part of the "aircraft" individually. I do leave my tandem PG wing connected to my pilot harness but thats a whole different animal. As far as why the roll. The biggest reason is it preserves the line organization, even in high winds if I unroll the wing ontop of itself it allows me to quickly unpack it while maintaining line organization and lowers possibility of tension knots. It also reduces the amount of wing fabric getting dragged on the ground. It works better on lower aspect ratio wings with wider cells such as speedwings, doesn't work well for narrow high cell count wings like paragliders.

I pack mine like yours but I completely expected you to fold it like a paper airplane because it's so tiny that it fits in the palm of your hand.
