Janie's Mill have very reasonably priced organic flour and grains. (I'm not affiliated with them - just a happy customer :)
My go-to sandwich bread recipe is one you released quite some time ago - a sourdough sandwich bread that gets mixed up before bed, rests overnight and then gets shaped and baked the next morning. Your recipe calls for APF (for that feeling of success), but I have now adjusted it to have a blend of hard white and/or hard red, along with emmer and about 1/2 c. organic pasta flour (the only fine white flour I have right now). Another adjustment I make is to do 4-5 stretch & folds in the morning before placing in the bread pan for rising. Works every time!

Loving how well my and my husbands bodies tolerate this bread. We are coming off the keto diet after realizing that we were leaving out a lot of the foods God gave us to eat. Another good resource for clean, pristine grains is Blue Bird Grain Farm in WA state. They offer a $10 flat rate shipping on all orders. They have Emmer, Spelt, Rye and White Sonora for soft wheat. Of corse hard red & white berries - all organic. I get organic Khorasan from Central Milling.

Thank you Mary. I started making sourdough in November 2003 when I first found you on RUclips. I wanted to try sourdough but never had success. My sister suffers so much from all purpose flour or whole wheat for that matter. I got pretty good at making the loaves with all purpose unbleached. However, she was still having stomach issues and I was very frustrated. Then you started talking about FMF and I got interested, then you mentioned that you’re going to give us this course at no cost to us which I am extremely grateful I bought everything made my first FMF loaf on my days off last week and my sister had absolutely zero stomach issues. This is the first time in many years that she has been able to enjoy bread without Pain. I know I keep saying it but thank you. 😃

Thank you Mary! I love grinding and using einkorn. I am a strong believer of fresh milled flour. I love the berries from Ancient Grains, 4 generation, and country life. I also started with Palouse. I recently bought Khorasan from Azure that was so clean and wonderful. Pleasant Hill grain, I think they source their berries from Ancient Grains? I would have loved to get berries from Bread Beckers, but I live in MN and no co-op goes that far. I buy during the sales in the fall and early winter. 🥰

Well, this is a big confirmation for me. I had been doing research on my stomach, not being able to handle starches of most kinds. Bananas, rice, potatoes, you name it. I found that there are some of us who are missing that enzyme that breaks down starches. I also discovered you can buy that missing enzyme and take it to help aid in digesting those starches. When I think about it, I don't have that painful stomach pain from eating my freshly milled grains. Thank you, Mary
I only make sandwich loafs so no stretch and folds just need and rise but I do add a little yeast as well

Thx Mary my starter is doing fantastic! I actually made discard pancakes this am and they were really good I keep my house pretty cool just 65 degrees in the winter and let it ferment for 24 hrs and it has a strong sourdough taste which I love. so thank you!
Thank you Mary, I enjoy your videos so much and plan on making my first starter this week. I don't have a mill, but I figure I will do one step at a time. I heard some time back that sour dough bread was good for your gut. One question, could you maybe quickly explain the different grains like Hard white, Red, Etc...even when I heard the term Wheat Berry, it was confusing because I didn't understand why they were calling grain a "Berry"?...LOL. For Now I bought some wheat flour to make my first loaf after my starter is nice and ready for it. Also I really enjoyed window shopping at your Amazon store front this weekend. yes for me it seems like it ferments faster and wants to eat sooner if leaving it out

Awesome information Mary. I am returning to eating bread after years of restitution because I thought I was intolerant. I have often heard people in Europe don’t have the issues that Americans have and always wondered why? Could it be the glyphosate in the flour, besides the lack of real nutrients in store bought products? I don’t know,but I want to return to a Whole Foods diet including freshly milled flour for my bread, whether or not I am successful with sourdough remains to be seen. If not I will be happy with freshly milled yeast breads….but I really want to be successful with FM Sourdough bread! 💕🍞🥖

Mary your experience is just so incredible and helpful and we benefit from your passion! I would try that wheat if I was in the States but I have to find my own sources here in Canada! I live within an hour of a red fife farmer and he brings it right to my door and it is such a good price. Spelt is easy for me to get but Einkorn is not. I am wondering if it is beneficial to filter out some of the bran with freshly milled wheat? Thanks so much!
I personally do not sift as I want to keep all the nutrition from the bran and germ. However, even if you sift it, the flour will be much healthier than store bought.

Hi Mary I made your honey oat sourdough sandwich bread and the taste is wonderful but it was a little dense should I let it rise a little longer or not mix it as much? I mixed it till it passed the window pane test I also did not use fresh milled flour since I don’t have a grain mill. It is out of stock but as soon as it comes back I’m going to order the nutrimill. Do you think fresh milled flour would make it less dense? Really enjoying your fresh milled episodes and you have made the whole process less intimidating. Thank you for all your hard work
I would definitely try just letting it rise longer. Fresh flour shouldn't make a huge difference with the rise. I think it is more about time. Thanks so much for watching!

I really need this course for success with my sourdough bread. I cannot afford a grain mill at this time, so I am using einkorn whole wheat and all purpose flours. My bread seems to take a long time doing its second rise in the bread pan. I’m using your no-knead sandwich bread. Is there anything you can recommend for greater success? From what I've read each slice would have 4 to 6 grams of fiber.

Yes, it is fed with Einkorn now and it doesn't seem to behave any differently for me.

In Louisiana, where I live, I cannot get BreadBeckers. They don’t ship it this far.

I don’t really have a facility to cook, conveniently therefore is there any bread at the store that you know of that is close to the quality that you make such as Ezekiel bread or some bakery that uses the same process you do thanks.

I believe the best options where I live, anyway, are Dave's and the Ezekiel brand. If I have to eat storebought, I usually use Daves.
What is considered a long ferment? Is it truly sourdough without doing a long ferment? I'm worried about the bread being a little too sour for things like PBnJs. I have heard the longer it ferments the more sour it becomes. I am making my very first starter right now with fresh milled rye and hard white. Is it suppose to smell like cream corn?

Hi there, if you’re using a sourdough starter for bread then you can only do a long ferment, meaning it takes me about 24 hours from when I start my bread to when it’s done. It isn’t super sour at this point but def a sourdough. If you’re wanting a bread for PB&J I would recommend using your starter for a sandwich bread recipe. There are many online
I agree! It's at least 12-18 hours all the way up to 24. And, if you put the shaped loaf in the fridge, you can leave it for a few days even.
So this enzyme doesn't get destroyed in the baking? I love the taste and body of fresh ground whole wheat bread but can't get a good oven spring, and I let my flour soak for 2 hours. I live at 7000' altitude and everything is different. I'm still trying to figure it out and keeping notes. Thank you for this great information! I will certainly try your suggestions. I just can't buy bread anymore!
According to research, the essential nutrients and enzymes actually increase while baking which in incredible!

Just curious Mary, why not get grains from Azure?
One thing that holds people back is they don't deliver to your house. You have to join a group and drive out and get the grains and the pick up date and time tends to not be flexible.
My nearest drop off is almost 3 hours away.
I don't doubt the health qualities of freshly ground flour, but I do wonder how much survives the heat of the oven?
This is the widely used thought on that in many articles: The baking process locks in the nutrients in the flour, so there's minimal nutritional loss after baking. Here's an article that states levels of major minerals remained virtually unchanged from kernel to flour to bread, while the levels of some trace minerals actually increased during processing. Here's the thing. $17+ for 3 or 5 lb bag. That is very pricey for me. King Arthur flour is $5-6. Big difference. This is why lower income folks can't be healthy.😢
It is more expensive to eat healthier, unfortunately. The thing with my situation is that I was spending so much on doctor visits and medications to try to help my problem. So, I feel like it kind of leveled out to be not that much more after I was able to stop buying different remedies. I wish healthy food was cheaper since it would save money in the healthcare system. Doesn't make sense to me!
Try Janie's Mill - their freshly milled organic flour is very reasonably priced - the whole wheat is $8.35 for 3 lbs (and price gets cheaper per pound if you buy in larger quantities - $1.78 per pound if you buy the 25 lb bag).
My question for you (you might not be able to answer) but I have heard that people with gluten issues (mine is just from auto immune and lesky gut issues) that the fresh milled and the sourdough doesn't cause issues?
I have a gluten sensitivity and went through so many tests to find out what was wrong. They diagnosed me with several issues throughout the years. I can attest that, for me, eating 100% fresh milled flour proves to be the only way I can eat bread products. I have no issues after eating them even if they are not sourdough. I hope that helps.
It’s bread the way God intended for our bodies. So much gluten sensitivity from eating un natural nutrient stripped flour. Maybe try adding it in slowly and let your body adjust. I am a bit gluten sensitive too and do great with fmf! Blessings
Just adding my two cents. I thought I was gluten intolerant for over a decade and ate gluten free. I also had IBS pretty severely. I switched to whole grains and not only can I tolerate wheat just fine, my IBS is 100% cured, absolutely no flare ups. I think a lot of people self diagnose themselves as gluten sensitive when really they just have a hard time digesting flour that is missing the germ and bran. I just got my mill, I haven't even tried fresh milled grains yet. My IBS is cured literally just from switching to 100% whole grain bread from the store.
Iam 82 i just dont like all work to making a sourdogh then having to leave it the refrigerator for so long then get it out let it sit I dont have the patience for and the time! Can i just do sprouted grain?
Absolutely! Actually, just using fresh milled flour is so incredibly healthy for you!
