Smoked Brisket Kolaches | Easy Leftover Brisket Recipe

- Smoking a brisket is always fun, but sometimes you end up with more leftover brisket than you know what to do with. I often times see requests for leftover brisket recipes ideas in the various BBQ groups I follow, so this recipe came together for those who aren't already in the know on our Texan secret weapon....the kolache.
Texas kolaches are bread stuffed with a savory fillings, usually sausage, eggs, cheese, and often times a jalapeno or two. They're as common as a donut when looking for a quick bite on a roadside. This fun twist on the traditional Texan kolache, takes that hunk of brisket in your freezer and puts it to good use. Let me know what you think and thanks for watching!

Ingredients:
1+ lb of leftover Brisket / BBQ
1 cup of shredded cheese of choice
1 tube of biscuit dough
1 jar of pickled jalapenos (or 2-3 fresh sliced peppers if looking for spicy)
Supplies:
1 non greased baking pan
1 Working oven

Wish I'd seen this earlier. I just finished a big batch of bierocks. Beef, onion, cabbage inside flattened yeast rolls.

What could I be doing wrong? Whenever I slice the brisket, it comes apart, good for sandwiches, but no slices!
You may be overcooking it a tad. What internal temp do you pull the brisket off the smoker at?
Kinda reminds me of the peroshkis i get from the eastern european deli sometimes. Have you ever tried this but with making your own buscuits? Also never learned what Brunswick stew is, im gonna look it up

Yes they’re very similar to the Russian peroshkis! Meat pies have many names it seems. I’ve made the dough from scratch a few times and they’re very good that way, but a lot of work. That’s mostly a holiday special when family and friends are all getting together.

@@outdoorindoortexan I made some Italian ones last night using frozen bread dough , pepperoni, spaghetti sauce and 3 cheeses , Parmesan, mozzarella and provolone. I’m trying to make some like a shop we use to live by. Well I got called out by one of my kids. The dough was off. So I’ve just made my first batch of dough. I feel challenged to get it right. I hope to make more Italians and some jolly’s today . That’s bacon, cream cheese and jalapeños. Gonna be a fun day.
