PitmasterX your salt dry aged Egg should be for 48 hours then it will be more solid and you can use a micro plain grader to shred the egg on top of the steak. plus you should rinse of the egg in water to remove the extra salt.

Sous Vide egg is best at 62 degree inside the Shell. Just put the whole egg into the sous vide for 1 Hour at 62 C. Greetings from Graz. 😉.
My favourite breakfast when I was a young boy at our meatfarm: steak baked in real butter, put the steak aside to rest, bake 3 eggs in the butter used to bake the steak, drape them over the steak, so to let the running eggjoke as a sauce, put some 'zilveruitjes ' aside, have a nice slice of dark bread, happy breakfast,

The salt egg should be cured longer and take a cheese grater to grate the egg over it.
It's Chinese New Year. We traditionally have hot pot and use raw egg in the dipping sauce.
I'm curious if you'd have better results (runny yolk) with less time in the salt and soy sauce.

I love dipping my steak in raw egg yolk, speceally wagyu with a drissle of lemon juice at the end of cooking, it cuts right thru the fat and make the wagyu taste amazing and not so "fatty" (does not taste the lemon at all)

One of the best dishes you can have is steak with a fried egg on top. -sunny side up. And a side of chips (french fries). You can thank me later.
Leave the egg in salt for 5 days. It gets so dry you can grate it like parmesan.

You need to salt and sugar cure the egg yolks for like 5 days then rinse them off. Use a micro planing to shave it on top of your steak.
Try a 5min boiled egg, then it's creamy and warm.

Firstly wasted so much salt curing the egg. Maybe a bit under cured. Try shaving it like Parmesan cheese.
Secondly is that dark soy? Light soy would give a better taste in my opinion. Would be nice to know. Would completely change the flavour.
