Chinese Potato Stir fry
Ingredients
Chinese Potato-1/2kg
Small onion/Big onion-15/1
Crushed chill flakes -21/2tsp
Curry leaves -
Salt-
Water -
Coconut Oil-3tbsp
Method
Peel skin from the koorka as shown in the video..choose any one method ..
Cook koorkka in a pot along with salt and turmeric powder by closing the pot..stir occasionally ..
when cooked well.. keep aside
Crush onion ..
Heat oil in a kadai
Add curryleaves ..
Then add crushed onion and saute for few minute till the raw smell goes ..
Now add crushed chilli and mix well..
Then saute until the raws smell goes ..
To that add cooked koorkka and mix well..
Mash few koorkka with the spatula ..
Mix well ..
Check the salt..
Finally sprinkle some oil and curryleaves ..close the pan for 5 minutes then serve ..
I do second method for many years.. First soak for 10 minutes to remove mud.. Then boil it like potato.. One whistle in cooker.. Then after removing skin.. Again cook it

എന്റെ അനുഭവം :
ആദ്യം plain ആയI തല്ലിയിട്ട്.. വീണ്ടും രണ്ടു മൂന്നു തവണ കൂർക്ക ചെറിയ നനവോടെ തല്ലുകയാണെങ്കിൽ...ആദ്യത്തെ മാർഗ്ഗം വഴി...ഏതാണ്ട് 90 ശതമാനവും വൃത്തിയാകും 😊👍(ഞാൻ ട്രൈ ചെയ്യാറുണ്ട്👍)
കൂടാതെ...വെള്ളത്തിലിട്ട് (അല്ലെങ്കിൽ ഒരു പ്ളാസ്റ്റിക് നെറ്റിൽ ഇട്ട് പൈപ്പിന് ചുവട്ടിൽ പിടിച്ചു തിരുമ്മുക) വെക്കുക..എന്നിട്ട് രണ്ടു കൈകൊണ്ടും തിരുമ്മിയാൽ...വേഗം തോല് ഇളകി പൊയ്ക്കൊള്ളും.
കൂർക്ക ഫ്രിഡ്ജിൽ വെച്ച് പിറ്റേദിവസം ചെയ്യുകയാണെങ്കിൽ...വീണ്ടും എളുപ്പമാണ്😎😎
Hi chechi loved this recipe. I have a suggestion regarding cleaning of koorga. I tried soaking the koorga overnight in water and the next day morning while washing it the skin came off very easily. You can try it out . Thank you for the lovely recipe and Tc cre 😊
Hi Veena...Istrain cleaned koorkka in a plastic colander just to remove excess water and without adding water I pressurecook it for just a whistle.It is not overcooked even if u wait a while to open the lid.Just b sure u switch off the flame as the first whistle blows...

Dear Veena, Please note that, Small Koorka is much much better. Enriched with a lot of vitamins. and these types available in the coastal area of Trichur. I hope you are from Trichur. Next time when come home, during summer time, please try it in places like, Kandassankadavu, Vatanappilly, Engandiyur area etc.
